If Dosa is cooked only on one side it causes excessive flatulence and indigestion. Did not expect this oversight from Kunal Kapur. This idea of cooking Dosa only on one side is wrong and has caught on from people thinking they have covered entire Southern India by visiting Hyderabad, where this type of half cooked Dosa (originally Idli and Dosa does not belong to the traditional cuisine of the Telengana region which were brought in by Tamil and Andhra settlers) is a distortion with excessive stuffings, overdose of masala and topped with insane amount of cheap cheese or buffalo milk ghee, when compared with the real dosa which was not available in Telegana before the annexation of Hyderabad to the Indian Union. The people of Telengana has an unhealthy obsession to stuff all food items they like to consume with excess of everything just like their over rated inflammation causing food item, Biryani. In fact, there was an Anti Idli-Dosa-Sambhar agitation in this region which turned quite violent. In all the states where Dosa was a regular breakfast item even couple of centuries before, it is always "COOKED ON BOTH SIDES"; including in the State of Andhra which contained Hyderabad within itself till rrecentl. Shri Kunal Kapur, if you embark on a journey to find the original Dosa recipe in any of the four states namely Andhra, Karnataka, Kerala and Tamilnadu in the Southern states, you will find that it is cooked on both sides. Period.
