Slow Cooked Corned Beef

  • Slow cooking your Corned Beef pretty much guarantees the most tender, delicious meat that melts in your mouth as you eat it. Just put it on in the morning and come back to it in the evening ready to eat for dinner perhaps with our White Onion Sauce on top, and then if you are lucky you have leftovers to have on toast with pickles.
    INGREDIENTS
    Serves 4 - 8 depending on size of corned beef
    Piece of corned silverside/beef
    1 onion cut into 4 pieces
    1 litre of water
    1/4 cup white vinegar
    2 tablespoons of brown sugar
    liberal sprinkle of pepper
    2 bay leaves
    METHOD
    Place the corned beef in your slow cooker.
    Add the rest of the ingredients.
    Cook on low for approximately 8 hours.
    Serve as is or with your desired sauce eg. White Onion Sauce.
    Note: If you don’t have a slow cooker you can simmer this on the stove top with a lid on for about 2 hours - results are nearly as good.

    Looks epic! I love using liquid stock instead of water and for a slight kick I chuck in two birds eye chillis. Seeds included. As there is so much water the chilli doesn't over power but adds nice flavor.

    So easy! That's the way I've done it for years. The only thing I do extra is stick a few cloves in the onions for a little added flavour. Nice work.

    Exactly the way I’ve been doing it for over 20 years. I stick some cloves in the onions though. Nice job!

    I cook my siver side in it's bag in slow cooker all night on loo ,, fulls apart ,, good to see how outhers do it though ,,

      Low temp is fine. I would only use high on the slow cooker if you wanted to speed up the cooking process.

    Don't forget you can throw your potatoes in peeled and cut and your carrots in as well. Some people even throw in cabbage. yummy

    there's no way that's been in there for 8 hours. it should fall apart when you cut it

      I usually start with it up but then I turn it about half way through just to get the liquid all over.

    Cooked on high or low??

      On Low for 8 hours gives the best fall apart in the mouth experience - you can cook it on high for 4 to 5 hours though if you want it faster. Stove top for about 2 hours.

      The ingredients added to the water help to add flavour and also to balance the salty taste of corned beef.

    you forgot to brine the beef (for 5-10 days). that's what makes it corned beef. you only have made slow cooked beef brisket.

      Hi Kai, not sure what country you are in but in Australia we can buy it already done it is called Silverside or Corned Beef and it is ready to cook.

      +cumawama1 yes but it probably doesn't matter how big it is as long as it fits in your slow cooker.
