It's a little of column A a little of column B. I think the rice will get it up to about 140 - 150 or so. And when you do this you are using high-quality eggs so chances of contaminants are lower.
Yeah but salmonella needs to get to 160 - 165 to kill it completely or it needs to be at a lower temp(145) for a couple minutes. This doesn't really achieve either. So it is a risk to eat unpasteurized eggs.
Our family actually made something similar to that when I was a kid. We would take a raw egg and beat it with some sugar and then pour that over hot rice for a sweet treat, nice to see a savory option for this.
@@SeasonLiberally Yeah it was great, about 1 cup of sugar (that can vary) and two smallish eggs for about 3 cups of rice. Mix the eggs first then add the sugar until it became syrupy and then pour over hot rice and mix it up, we loved it as kids.
When I went to Japan the hotels would have heaps of fresh white rice and a bowl of raw eggs out on the breakfast buffet so they could make this exact thing. I eat it all the time, but now I have to try it with the sesame oil.

Maybe some wasabi, mirin, fish sauce or go a different direction like shrimp paste, depending on what kind of food you like. I'm assuming it's an allergy to all nuts, otherwise walnut oil may do the trick.
The additives all vary by individual. Don't think you have to put any of the ones I put in. Add pickles, other vegetables, a splash of vinegar, a splash of fish sauce, mirin, msg powder, bonito flakes. The possibilities are endless.
Mine's a bit different. I make it with bucatini, pork belly, and pecorino, and a fair bit of 16 mesh pepper. :) I did receive a Masamoto boning knife today. I saw someone using one and had to compare it to my Benchmade boning knife. BBQ has me all fired up, right now. Both are too expensive, if I wasn't reckless, I'd just stick to the Victornox, it's fine.

I personally love little recipes like this because they’re ones I might actually do. With ADHD, doing everything from scratch like all cooking on UA-cam does right now just isn’t realistic for me so I find a lot of that content alienating. I’d love to see more videos like this.
