Whenever possible, I try and do some food prepping to make meals easier. Today’s food prep is to stew a nearly three and a half pound chuck roast in tomato and chili powder. The cooking took some time but was well worth the effort.
Just as I finished the cooking, the dense fog burned off and we got outside and walked Moonstone Beach. I found a huge sea cave that is only accessible at low tide. I’m not sure why this area is named Moonstone, but it does feel like being on another world.

My name is Scott and in 2015, I bought a Ram ProMaster City to live in. Even though I didn’t know much about RV’s and campervans, I set about building the van out as a minivan camper. And in April of 2016, I moved into my minivan full time.
Over the years, I’ve learned you don’t need to have a big skill set to build your own campervan. And that living as a minimalist and utilizing solar power can be a less expensive way to live. I’ve also learned that a minivan can be a very comfortable home.
Please follow along as I document my journey.

Dude, you've outdone yourself. This video is extremely cool. I've been watching your channel for about a year, and I always enjoy your videos. Keep up the good work, Scott!
Hey Thanks Curt
Don't worry about the tripods Scott. We are here for you and your life discussions, cooking etc. Luv ya.
@@tianikane3312 I never noticed the tripod
Now what am I gonna do tomorrow? Probably watch it again lol
Haha
loved the foggy beach scenery. I could sit there for hours on the beach sipping coffee and watching the waves
It's the little things not thought of and the simple views not expected that just makes it all a completeness to the amazing beauty of natures constant motion through change. The secrets that lie hidden awaiting to be explored that is pure joy on life's Naturesque.
That looks really nice, I must admit I like some cool weather
The surfers made the sun come out....they have sun juju. Thanks for the beautiful share and yum looking recipe.
Roast looks so good! My stove died couple years back, bought a hot plate with covered burner for cooking, yes queen of procrastination, but also so used to it now and no issues, I do quite well with one burner. So I enjoy getting new ideas watching how you cook with one burner.
Sometimes keeping it simple is better. Thanks Carol
I’d never heard of Moonstone Beach. It’s absolutely gorgeous! Thanks for taking us there. I love the fog……your shirt looks great by the way. The meat looked delicious as well.
Right around the rocks next to Moonstone is Luffenholtz Beach which is the only square shaped beach I’ve ever seen in my life. It’s best at low tide. The name the Wiyot people gave it is Du’ Pelou’l, which means “where they get flint”. As you’d guess the rocks and cliffs contain flint.
When I was there a couple of weeks ago a group of bohemian hippies were juggling, twirling sticks, and one guy was playing a pan flute. Got to love Humboldt.
Thank you so much for sharing your day with us! I really felt the calm and peacefulness, and boy oh boy did that first bite of the taco taste delicious!! Thank you!!
Hi Scott. How are you doing today? You look like you’re tired. Get some rest and take care of yourself. My husband and I love your videos.
I’m a stressed but good. Thanks Gloria
This was a great video Scott I really enjoyed this video . Thank you so much for taking the time to share with us 😎 Thanks again Lee
Your recipe looks great I’m going to try it! Thank You!❤️
A nice, and yummy pot roast and a lovely spot on the beach....does life get any better than that???
I doubt it!!!!
(Wish I could be there. )....
but happy for you just the same!!! Enjoy Scott
❤🎉
I just adore the foggy, shades-of-grey seascape, and Moonstone Beach is the perfect name for it. Glad you still have the electric kettle, so you didn't have to wait 2.5 hours for a cup! And those caves were very cool.
I had to get my fix
I agree, love this coast. It will be my first winter here & I hope to tye the knot & become an Oregonian 🎉 I loved the walk on the beach & the cave. You always find the coolest places, thanks Scott ❣️
💜 another wonderful video! Thank you for sharing it with us already. I’ll watch it again tomorrow when you release it to the rest of the world. It’s beautiful.
I enjoy the cooking Vlog, relaxing and I have picked up some good cooking and coffee tips
@@seanh4841 yes, thank you for that reminder I need to get back to the playlist for the cooking shows. They were very good! I got distracted by another one of his videos and then a different one and then a different one so it kind of took me away from that playlist for a while… He has such a, wonderful vibe. No matter what he does, it will be great!
Hi Scott, those caves are awesome. They don't go to much deeper and yes there are a couple more caves but you have to go further north up the beach during low tide.🐢🐩🐶🐕🌺✨🌈🌊🌻🐳🌈
Cool thanks!
What an absolutely beautiful beach! I can't thank you enough for sharing that
You’re welcome Kenny
What a lovely vid, especially that cave! Good angle and beautiful coast Scott. Like your flannel shirt too. Thank you for sharing your day.🐈🌱
That cave was awesome
Wonderful place anytime!
Oooh, Scott! That meat made me want to do that with a pork roast. That would be great for quick meals. Thanks for the idea. And you buy local coffee, just don't always get it drunk up before it's time to ,move. I think all the vendors still appreciate not only the business but the shout outs too.
wow beautiful scenery ! wheres your person to enjoy your road coffee with
Holy moly, those tacos looked delicious, and that crunch! Now I have a craving for chuck roast tacos. 😋That shot in the video when you said, "I don't know why it's called Moonstone" was amazing. As was the sea cave. Thank you Scott! I hope you have a fabulous week. PS. I like the new shirt on you. 🙂
Thanks Luna
Your tacos looked awesome!
Great video - in the PNW just wait 5 minutes and the weather will change. Be safe!
Wow, fantastic area, thank you for taking us with you.
Thanks for sharing your day! Great place for a nap. 💤 shirt looks nice 👍. Tacos look and sound delicious 🤤 😋😋
Hi Scott, Enjoyed your narriative . Beautiful beach walk too.
Thanks Jeanie. Hope you’re feeling better
Another great video, the beach looked beautiful especially with that sea cave. Love the fog too!🌥
Beautiful video. Yum too.
WOW !!! ... Magical place !!!
Thanks for sharing, great vid !
Thank you
I didn't know there was a Moonstone Beach up there near Trinidad. It's Beautiful!! ... sooo much to discover up there Have fun!! 😺💜
I enjoyed your video today. You did a great job with that chuck roast, it looked delicious in the tacos with cheese. Also a very nice view of the California beach. Thanks!
Damn. Now I'm hungry, and it's only 8am haha. Thanks for the vid
You’re welcome
Never seen your content. But no surprise since I follow lots of camping and overland people. The point is; you sound like a professional cooking show. The way you explain, your tone etc. noice. 👍
hi Scott found your channel and enjoy your travel adventures and sharing your minalimist way of living you look nice in your shirt and dinner looks delish look forward to your videos
Thanks
Thanks for sharing the solar terms of your hot pot. I found that very useful.
I too have noticed a little fat as far as eggs helps with satiety.
I bought a grill that I love but it’s electric. It would not be used during traveling. But when I’m static on grid it is my preferred way to batch cook.
I adore your setup. You have very good systems. TFS
What a beautiful spot. Love your videos. ❤️
Some beautiful scenery today, cool cave!
Awesome video
Hi Scott! I'd love to have the recipe for that beef. It looked perfect! Love the beach, all of it. Thanks, for sharing. Happy trails to you.
Oh, I don’t really have a recipe. I wing it every time. It never comes out exactly the same each time. But that’s part of what makes it interesting
@@StaticCamperVan Thank you. I will definitely rewind the video because that meat was perfectly tenderized!
I think the grey flannel is very flattering, I like it😊
Nice video, such a beautiful place
Hauntingly beautiful location. Could easily see it being used in a film. Man, I always get hungry after watching one of your videos. Cheers.
Great video Scott- interesting history the little river was formerly the most polluted river in California (cattle run off was a culprit)
Yep, grassfed local beef is where it's at! So tasty and good for you😊
Great beach and river scenes. Lovely.
Time to come back to Seattle. The weather has been nice, overcast, cool & rain in a few days. You need more of that Seattle coffee
Honestly, if my van could do the trip, I would. Oh well it’s nice down here too
This is a spectacular landing spot. At times it looked like a black and white photograph! Those taco's looked so good!
A perfectly worded pun. Excellent job Blythe
Great video, Scott. That beach is " otherworldly." So pretty!
Thanks!
Beautiful beach tour. The meat looks delicious! And a great tutorial on making a stew. As always, good entertainment. Have a great week!
Thanks Joanne, you too
Your videos are awesome and thank you for what you do.
That's so cool ❤
Very Cool!!
I just smoked a chuck roast yesterday, but yours looks amazingly tasty!
Ohhh, a smoked chuck roast would be extra tasty
thanks for sharing
That meat would make a great stew, and the tacos look fabulous 👌 😊
Scott I'm starving now
I didn't see any yellow bird go on those tacos 😮
The sauce was a good sub for Yellowbird. And it was spicy enough already
Thanks Steve. Another great video. You help make my Mondays better.
Just kidding Scott. Keep up the good work.
Haha
1:56 Ummm…chuck roast! 😋
Fantastic scenery! 😃
There is a Moonstone Beach on the Central coast of Ca. Enjoy!
Hey static i decided to join again. I never stopped watching just never had a payment card to pay after i cut up the last one.
Hey thanks Ivan. There might be some members only videos to catch up on that you can find in the Community Tab. I’ll have a new members video up later this week.
Just down the street from where I live. If you haven't walked the Trinidad head I highly recommend it.
Thanks. I put up a video of Trinidad a few weeks back. Such a gem.
Great video! The meat looked delicious! You could use part of it for a beef ragu with noodles. I was just up in that area at the avenue of the giants. Saw the sign for moon beach!
For some reason I really love the foggy rainy weather too…maybe I need to move further north. 😊 I’m going to check out Moonstone Beach.
The foggy rainy season is almost here in the Pacific Northwest
cool, I really like Moonstone and Little River and am glad you do too. I used to love walking in fog like that on the beach. I enjoy that drive from there north to Trinidad via Scenic Dr past Houda Cove, Luffenholtz Beach, Baker Beach. Then on past Trinidad park to Sue-Meg Park via Stagecoach road/Pacific Point road is so cool. I was glad you bought the local grass fed beef and the your cooking again forced me to pick up the phone and call B**e's and order take out. Your tacos always really look good. I'm concerned about that transmission.
🦋
Wow. Very nice videography. 😍 I have to watch it three more times!
Aww thanks
I need to watch this again. 🙂✌️
Please do!
Here I am watching again lol
Haha. Thanks Barbara. I can always count on you
S0 cool beach so cool meat so cool you even cooler 😎
Every week, a mini vacation. 🏞️ Getting a chuck roast was a great idea. Those tacos look incredible! 🌮🌮🌮☕️
What a gorgeous beach day. Just the weather for stewing beef and a nap, IMO. Those tacos looked absolutely amazing, but I've gotta tell you beef cooked in red wine a la Julia Child ranks at or near the top of my list of favorite foods. And you talking about the visible tripod (nevermind it!) only made me think about what great video work you do. Today's installment was sublime:)
Yes, I will most likely use some red wine in the future. It is my favorite for cooking beef. Thanks for the compliment. It’s easy to make videos in Humboldt. It’s so beautiful everywhere here.
@@StaticCamperVan Cool! You're welcome:)

@StaticCamperVan you're welcome, but it's gotta be like 4am over there on the west coast right now. You up partying!?

Take the meat off of the stove for 5 minutes to make your coffee.
It’s much more efficient than using 4 hours of your battery bank.
Happy Fall season 🍁 🍃 🍂 our Equinox 😊 Cindy 👋
I wouldn't have even noticed that tripod if you didn't mention it. Nothing to worry over :)

Hey Scott, it was nice chatting with you at the beach yesterday (well, beach parking lot anyway). Unfortunately my sabbatical and time in Humboldt is officially over (drove home today). I actually ended my trip at Moonstone Beach last evening watching the sunset at an extremely low tide. If we ever happen to be in Humboldt at the same time again I’d be happy to cook you a steak or short ribs rustic style over some fire pit coals at the beach (one of my absolute favorite ways to enjoy a meal). You’ll have to bring the Yellowbird and coffee 😂. Take care good sir!
Watching from Thailand. Love your cool videos. Jealous the way you are.
Thanks Nicky
I wanted to suggest, putting aluminum foil around the burner. I think I remember you saying you don't carry aluminum foil. Smart! I have had the same roll of foil in my van for YEARS. Thanks for the great videos.
Haha. I do have a little foil that I bought s few years back. As long as I can keep the back doors open, that’s good enough for me
You are dressing like a Humboldtonian. Perfect fall ensemble. Of course I would have peeled off my shoes and gotten my feet wet and cold. 😅
I made grass fed ground beef tacos for dinner and was eating them while watching your video.
You better stay in Humboldt so as not to stress your van. We like you here anyway!
From what I recall of that cave, it gets narrow and you have squat down pretty far and then it just suddenly stops. You never lose sight of the mouth of the cave, but it IS pretty cool!
I do enjoy being here in Humboldt. Oh, cool. I got to get back and explore the cave!
I have an afghani pressure cooker works grate for cooking dried beans and stews if you make that kind of food a lot you would like them, they will work on a campfire also
That cave is awesome!
For a second there….. I was thinking you were going to moon us! 🤣 Then I realized…. Probably not. After all, this is UA-cam! Not to mention, you are “Static Camper Van Man” and, that’s just not your shtick! 😅 🌕

Hey Scott, how about gluing a magnet to the electric pot so it sticks to your metal counter top. Just a thought 😊
It gets hot. The magnet would probably demagnetize quickly
One of your Yakima followers checking in here :)
I really like these more frequent videos. Where did you buy the shirt from? REI?
Thanks, I am keeping to an every Monday schedule for new videos. Yes, this shirt was bought at REI
I think the sun came out because you finally got some nourishment.
I can understand why you might have thought about increasing the reserve capacity of your solar setup, since a confessed partiality to mixed weather is part of the deal too. And I totally get the reluctance about DC to DC chargers. But there is a new product by Pecron that permits a range of power levels (all the way up to 500W) to be tapped from the vehicle battery, without any supplemental fiddling with the alternator. I hate to say it out loud, but it might provide a handy justification for driving just a few too many miles on rainy days . . .
You might have missed part of the reason why I wouldn’t add engine charging to this van. I did gloss over the point as it isn’t something I like to think about
It's other worldly there in Moonstone.
In our electric system, we have a DC to DC charger hooked up to a light switch. It lets us charge from the van battery (the alternator) when the van is on and in motion. It saves us when the weather is really bad or in winter when the sun is low and we aren't far enough south to get enough solar.
Also, just for your own knowledge. You panels produce watts. Your batteries store watt hours which means they can released x watts over an hour. If you panels produce 100 watts consistently over an hour, you've stored 100 watt hours in your battery.
Often times in my vlogs I am answering questions that I have received. This is one of those situations. I’m not intending to instruct anyone on how my system works. I’m simply trying to give an answer to the questions that I receive. It would be helpful if the companies that sold solar equipment would pick one form of energy measurement. But since they don’t, the best way for me to answer this question is to reply with specific numbers and units of measure related to each of the components.
@@StaticCamperVan I also wish they would pick between amp hours and watt hours. It gets annoying when comparing systems. If you have a computer and a spreadsheet, it's easy to do the conversion for a bunch at once, but it is a pain when glancing through Amazon or something.
