  • At Bernal Cutlery we are frequently asked how to cook Japanese rice well, especially using our rice donabes. We invited Eiji-san and Nobu-san from Hogure Shucho Onigiri Stand in Tokyo to explain step by step how to make delicious rice. As chefs who make onigiris (rice balls), well-cooked rice is essential to their craft.
They answer questions for us like:
How do you wash rice? (Spoiler: This will surprise you) How much water do you use? How does cooking in a donabe change the texture and taste?
    1 gou= ¾ US cup
Cooking time in the rice donabe varies slightly depending on how many cups of rice you are making, but when you start to see steady steam come out is the time to turn the gas off. (On average 10 minutes, longer for 5 or 6 cups)
