As long as I can remember I have seen the mold growing up in Hawaii but my mom grandma and aunties always used their hands to shape the Musubi - even stuffing Umai in the middle or pieces of daikon

You seem to be misunderstanding onigiri as sushi. Onigiri doesn't need vinegar or sugar.

Whenever I try to make onigiri for myself I turn it to pyramid shaped
The thing I never seem to get right when making onigiri is the rice; it doesn’t stick to itself like its supposed to, turning my triangles into piles of cooked non-sticky rice.
i do it by hand so this is making me a ABSOLUTE CRAZY PERSON
my grandpa always taught me doing it by hand was the right way because that’s how his mother taught him how to do it and he always said it is the traditional way to do them and you really aren’t supposed to press them down really hard either its supposed to be light not a rice brick just pressed down enough to stick to itself

I did this with my Japanese Club at school, we used plastic wrap and added furikake, we even made it into triangles with out hands
Paint the molded onigiri with silver or gold food coloring and you got yourself unlimited edible UA-cam play buttons.
