Here's a simple recipe for cold coffee ice cream:
Ingredients:
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
2 tablespoons instant coffee powder
1 teaspoon vanilla extract
4 large egg yolks
Instructions:
1. In a saucepan, combine the heavy cream, milk, sugar, and instant coffee powder. Heat the mixture over medium heat, stirring occasionally, until it reaches a simmer. Remove from heat.
2. In a separate bowl, whisk the egg yolks until they are well beaten. Slowly pour about 1/2 cup of the hot cream mixture into the egg yolks while whisking continuously. This will temper the yolks and prevent them from curdling.
3. Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture. Place the saucepan back on the stove over medium heat.
4. Cook the mixture, stirring constantly with a wooden spoon or spatula, until it thickens and coats the back of the spoon. This usually takes about 5-7 minutes. Be careful not to let the mixture boil.
5. Once the mixture has thickened, remove it from the heat and stir in the vanilla extract. Let it cool for a few minutes, then cover and refrigerate for at least 4 hours or overnight.
6. After the mixture has chilled, transfer it to an ice cream maker and churn according to the manufacturer's instructions. This usually takes about 20-25 minutes, or until the ice cream has a soft-serve consistency.
7. If you prefer a firmer texture, transfer the churned ice cream to an airtight container and freeze for an additional 2-4 hours, or until it reaches your desired consistency.
8. Serve the cold coffee ice cream in bowls or cones, and enjoy!
Note: If you don't have an ice cream maker, you can pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, remove it from the freezer and vigorously stir or whisk the mixture to break up any ice crystals. Repeat this process for about 3-4 hours, or until the ice cream reaches the desired consistency.
