    In Barbados we make a desert similar to this with cornmeal coconut raisins milk and nutmeg in banana leaves and we call them Conkies.

      In Jamaica we also make a desert and also savory one from cornmeal! I am married to a Nigerian and I make moi moi regularly, and with the leaves. It is my husband's and children's favourite dish. I have learnt a lot from this channel!

      You can use small size square foil pans or plates with lid for the moi moi instead of the leaves

      @Diana you can use foil to wrap it. Check her videos she has where she used foil. It helped me too because i can't get this leaves where i am

      Hi Diana,you can also use aluminium containers,greased lightly with oil,to avoid sticking,or you can use stainless steel bowls,mostly used for curry,i also use them,in the absence of the leaves used for moi moi.Gd luck....cos,once you're addicted,you can't stop eating them....😘😊😍

    Flo, I'm not so sure about nutmeg being synonymous with traditional moi-moi flavour. It's a Nigerian cuisine faux pax in my opinion. When promoting our traditional dishes, it's important to retain & promote their distinct flavours like other cultures do. Using nutmeg in moi- moi is a bit like to adding cinnamon powder to your egusi soup but if you like it, that's absolutely fine. Your point about not adding too much crayfish is valid because dried crayfish can be so overwhelming & moi moi should be prepared to retain its delicate flavour! That's the reason why some people's moi moi tastes like steamed crayfish pudding!

    Auntie flo what do you think is the reason why my moi moi stick to the foil when I'm unwrapping it after cooking. I need tip biko nwanyioma

      To prevent the mio mio sticking to the foil, just lightly grease or spray the foil with some oil before pouring the miobmio for wrap. My mother inlaw gave me the tip and I have not looked back since. My mio mio unwrap without any mess.

      Ada Kemi's tip works but if you add enough oil to the moi moi mix, it will not stick so you probably have been doing fitfam 😉hence not adding enough oil. And let it cool down before unwrapping because if it is too hot it will stick. Moi Moi that is not well done (ie not cooked for long enough) or the one that is too watery will also stick. A few reasons why that would happen so eliminate some and find the culprit. 😘

    Aunt Flo! Keep rocking biko! I enjoyed the dance part, it makes cooking fun and exciting. I didn't want the video to end. The moimoi and akamu got my tummy rumbling.
    Wish I could get the leaves around where I live,I make use of foil and then bake which comes out nice,less stress for me cos I don't have to check for water all the time. Lol. Thanks for sharing.

    My lively sister, well done, cooking and dancing, i love your style, i will cook moi moi this weekend the leave is every where in Malaysia here, they use it as flowers and they even sell plantain and banana leave in the malls and wet market, i get every Nigerian food I need in the wet market

    I see you added all your ingredients before blending. Is there a reason? Would it not have been easy to just blend the beans and pepper then add the ingredients? Cooking and dancing is very healthy in as much as you have the correct song. The moi moi looks beautiful and delicious. Well done.

      I think doing that makes all the ingredients mix well and the beans would absorb it better. I didnt know too, a big tip I just learnt, thank you Flo.

      Chibuike what Glory said. To get the smoothest blend, everything goes into the blender. You don't want to bite into a stubborn lump of seasoning cube while eating the Moi Moi 😂😂😂 If I could I would even add the oil into the blender. The only reason I stopped doing that is that the blender is so slippery when washing it.

Now I feel like cooking moi moi, still thinking how to wrap it, I’ve read researches about nylon and aluminium not healthy for cooking. I hope find some moi moi leave in Africa market.

      Yes, it's a big issue. I still use aluminium foil bags in spite of the warning when I run out on these ones. The one I will never use is plastic, I just feel it is worse and the Moi Moi I've seen cooked with plastic bags are not even appetizing, that shape of the wrapping just puts me off eating the Moi Moi. I hope you find the leaf.

    To make this moi moi aunty Flo can I use fresh tomatoes to give it that peachy colour as I can only find green bell peppers and can I use tin from tomato paste as my leaves

      I wouldn't use fresh tomato because it adds a tangy taste to the Moi Moi.
      Where do you live? Sweet peppers (fresh paprika), red bell peppers, paprika powder are available in most countries and I would use any of those 3 before I use tomatoes.
      Cooking with tomato tins is not advisable due to the health risk. I would use aluminium foil bags or aluminium food packs first before I use tomato tins.     Aunty Flo can you suggest any alternative to knor and Maggi cubes as there's alot of bad press to the aforementioned stating they both contain MSG which is a flavour enhancer and quite dangerous to health. I'm beginning to worry as the ohibo ones I use aren't as good as knor and Maggi.

      Knorr says that their Knorr Chicken does not contain MSG. Even oyibo ones contain some kind of taste enhancer hence why a small cube can season a pot of soup. If you want to stay away from store-bought seasoning cubes completely, you can make your own by following any of these videos:

    Well done Flo. This is my question- when will Nigerians in the Food Network tell us how much or quantity of water/ingredients needed per quantity of beans used?
    Non-Nigerians find it difficult to calculate quantities by guessing. What do you say?

      Nne eh, wrapping Moi Moi with leaves no be moi moi. It comes with experience. You see that second one I unfolded and refolded? I already knew from experience that it would leak if not unravel completely if I poured the moi moi into it as it was.

    Growing up in south East, we called this MAI MAI. Today the Yoruba pronunciation,MOI MOI has taken over. Yorubas mostly exchange A with O.
    Christmas is pronounced Christmos.

      Yes,l use my leaves twice. I wash thoroughly with sponge, allow to drain and dry,them wrap with cling film and keep in a carrier bag inside the freezer. Infact l am using used leave today for moinmoin later on.

      I can't explain it. But let me put it this way: I recommend adding nutmeg to anyone that has ever complained that his/her Moi Moi tastes good but something is missing and they always come back with a testimony. You'll have to try it to see what it tastes like. Don't add too much, you need just a small quantity.
