One of those food grade barrels with the screw on lid might keep the water out, but they're probably a lot bigger than you need.

what if you put a rack in the bucket to keep the taters elevated a few inches off the bottom of the bucket?

I was even thinking of a spot under the roof of the carport...so have protection from the rain...
Don’t forget if you’re growing your beans this season, to give it a go along your fence line, leave open space for other produce. If you have an old mesh bag put your potatoes in hook up by the lid so they hang free not touching bottom, using couple buckets. Should work. 😉🤷♀️🥰 @AlleghenyHomestead
