I highly recommend watching Naroditsky's video on shutting down the Stafford gambit - it's a very popular line around your level on blitz/bullet but quite easy to refute if you know the right ideas. Typically the defence will involve, after taking your opponent's knight on c6, the moves: d3 (protecting pawn on e4) Bf2 (covering g4 where the opponent wants to get their knight) c3 (preparing d4, which will cut off the diagonal of their bishop on c5) There are still a lot of tricks/ideas you opponent can throw at you, but this should set you up well. You'll be up a pawn and your opponent won't have enough initiative to compensate for it.
While I appreciate you wanting to mix up the content NL, I enjoy the 10min matches a lot more because the most entertaining thing in these videos for me is your analysis. There just isn't much of that in these fast matches. I understand that the short games are probably much more fun for you to play but they are less fun to watch, but that's just my opinion not hating, Merry Christmas NL!

On Black's turn, they are allowed to retroactively capture White's pawn. The rule is called "en passant" and basically just allows Black's pawn in that case to take White's.

yeah i really like the 10min matches. the 3-5min ones just end with the opponent running out of time and the endgame being all blunders.
