The BEST Vietnamese PHO Recipe The Meats: 2 small tendon 1 big hunk of brisket 3 lbs of beef rib 4 lbs of beef bone Boil 20 minutes, then dump off all that gunk. Rinse the pot and meats. Aromatics: 1/2 cup of coriander 1 cinnamon stick 3 star anise 1 cardamon pod Toast for 5 minutes. Don't burn it 😒 3 big onion 6 huge slices of ginger Char it on the stove top (don't do that. Broil it). 1 piece of rock sugar To the pot: Add rinsed meats, 20 quarts of water, charred onions & ginger, rock sugar, toasted aromatics, 1 cup of dried shrimpies, 1 cups of fiss/fish sauce & 3 tablespoons of salt. Blast the heat until broth is at a rolling boil. Drop the heat to a medium low. Let it sit for 12 hours. After 6-7 hours take out the brisket, let it cool and throw into the fridge. After 12 hours, skim the fat off the broth and strain the little bits out. Reheat the magical broth. Thinly slice the brisket. Slice beef meatballs in half. Add beef bones back into broth. Toppings: Raw, thinly sliced ribeye or roundeye Bean sprouts Thai basil Sliced meatballs Brisket Raw onion Lime Cilantro Green onion Add 1 extra cup of water to the broth. His cup is better than your cup. Drop meatballs into the pool. Don't have to swim, just gotta get in. Boil banh pho tuoi/fresh rice stick noodle, for 5 seconds. Not too much noodle, it expands in the pho. Assemble: Fresh noodles into the bowl, stack of raw onions, brisket on the side, raw beef, 2 meatballs, 1 meaty beef bone/rib, mom ate the tendon so forget about it. Add broth, green onion & cilantro. Taste. Quick time. Be super pumped for this. Add Thai basil, lime, sriracha & hoisin not poision. A moment of silence while you mix the extra toppings into the pho. Nibble on a fresh red chili pepper as you eat (sliced jalapeño is an acceptable replacement). Remember that you forgot to add tripe. Realize you are consuming pure gold. Next time, consider msg. If you let the pot simmer for 12 hours on med low heat, the fat won't be solidified at the end of 12 hours as it's still hot. Pretty sure he skipped a step to let the broth cool completely before the straining part.

I've never made pho before and I just made this recipe. The broth is incredible. The charring of the onions and ginger provides a subtle smokey flavor and the fish sauce and dried shrimp packs an umami punch that I looove. Debbie Youngberg the places u can eat local food in Vietnam, not exactly the most sanitary. Getting sick is not uncommon. At least in a fast food joint there’s some kind of standard.
half_lifemozzy it’s not that places are “sanitary” it’s mostly because your body isn’t used to the ingredients and water from another country, I was born in Vietnam and move to the U.s when I was young and my first few meals I threw up and everything made me nauseous as hell

Amazing. I had my first bowl of pho over 30 years ago before it was a common thing in the U.S.. Since then, I've had hundreds of bowls of it. This is the first time I've ever seen it made. Great video!
I love pho with every ounce of my being and I’ve seen the recipe so many times in so many ways...and yet the amount of work that goes into it leaves me going “meh, I’ll pay the $10-15 dollars for a bowl” and move on with my life

Always happy to see different groups of people come to a resturant to eat and no Asian do not eat dogs. That’s only in the Congo heart of Asia jungle but people there are slowly changing their minds of what to eat due to how they start to love their pets.
Holly crap...I am SO happy I stumble onto this. Pure gold. I'm making this now (well, actually I woke up before 5am so I could make the broth). Also, I HATE hearing people slurp or chew but for some reason when Quang does it I'm like "Hell yeah! That's good food right thar."
You can settle for 8 and it will still turn out good. I started at 11 and was done by 7 so it's not bad. Just set a timer for every 2 hours and skim the gunk off the top and go do other things.

I totally cheated by cooking the broth in my insta pot and it still turned out delicious! Pressure cook for 2 hours, instant release and took out the brisket. Pressure cook again for an hour and let it come to release naturally for 30 minutes. So good. I definitely want to try it naturally but I started cooking late and was on a time crunch so I winged it! Still turned out delicious! I also added ox tails. Thank you!

I try to explain this to people and they look at me like I'm crazy. I tell them if they have ate at any Asian restaurant they have had msg. It is in ALOT of foods you buy at the store.
Cassie Schroeder-Rhodes True. If you ever ate anything contains soy sauce, there’s MSG in there. Soy sauce tastes so good mainly because of the naturally-fermented MSG.
I never believed the negative hype about MSG as I look at the generations of Asians that have used it and still live long lives. With that said, the tide is turning and MSG is going to get the same treatment as eggs where they will declare it wasn't as bad as they made it out to be. That doesn't mean you shouldn't use it in moderation, like you would salt.

I can’t believe you put those veggies right on the ceramic cook top!! Never seen that before, would also never do it, I would hate to clean it after. The broiler in you oven could have done the job.
At the last two hours. You can keep boiling stock for many days with little breakage of protein and collagen. You can keep it for days in the fridge. But the moment you introduce salt, it cause the proteins and collagen to break. Adding veggies too early sours the broth as well as you continue to cook. Try it hold off on all of it until the last two hours. Season shortly before you serve it. Another fun tidbit is that as the broth cools the flavor will become more pronounce. So if you want to adjust salt and sugar that’s the time to do it. I’ve been taught that by my mom and also reinforced when I worked at a ramen and a pho shop.

4 hours is bare minimum and it's good enough to eat. Stew longer for more flavor but I cheat with instapot.

I try to explain this to people and they look at me like I'm crazy. I tell them if they have ate at any Asian restaurant they have had msg. It is in ALOT of foods you buy at the store.

I never believed the negative hype about MSG as I look at the generations of Asians that have used it and still live long lives. With that said, the tide is turning and MSG is going to get the same treatment as eggs where they will declare it wasn't as bad as they made it out to be. That doesn't mean you shouldn't use it in moderation, like you would salt.

At the last two hours. You can keep boiling stock for many days with little breakage of protein and collagen. You can keep it for days in the fridge. But the moment you introduce salt, it cause the proteins and collagen to break. Adding veggies too early sours the broth as well as you continue to cook. Try it hold off on all of it until the last two hours. Season shortly before you serve it. Another fun tidbit is that as the broth cools the flavor will become more pronounce. So if you want to adjust salt and sugar that’s the time to do it. I’ve been taught that by my mom and also reinforced when I worked at a ramen and a pho shop.
