In the second case (text with stroke) it doesn't really matter if you use outline or expand, cause you are going to have to hit expand afterwards anyways if you want to separate the stroke from the fill

Hi. It seems to me that instead of using the Expand option twice, simply use the Object> Path> Outline Stroke command. What do you think?

My stroke is a different color than the fill - and using the appearance panel, the stroke layer is below the fill layer. When I 'unite', it turns the entire shape the color of my fill layer. How do I fix this?

Unfortunately converting font to shapes is one way. You can’t go back without retyping it

Once you turn text into shapes, you can’t turn it back. I would suggest keeping an editable piece somewhere in your document just in case!

Create outlines doesn’t work when you have appearance elements like strokes on your text. So I also show you how to properly expand and unite your shapes! 👊
