Ingredients for this Recipe:
• ½ peeled yellow onion
• 5 large garlic cloves
• 1 teaspoon fresh ginger, trimmed
• 1 cup water
• 1 cup soy sauce
• ½ cup packed light brown sugar
• 3 tablespoons mirin
• ¼ cup honey
• 3 tablespoons sesame oil
• 2 teaspoons sesame seeds
• 1 peeled and seeded Asian pear
• 1 peeled and seeded Fuji apple
• ½ peeled kiwi
• ¼ cup sliced green onions
• ½ teaspoon ground pepper
• 3 pounds kalbi cut short ribs
Serves 4
Prep Time: 20 minutes
Cook Time: 10 minutes
Marinating Time: 12 hours
Procedures:
1. Add all of the ingredients except for the ribs to a blender and blend on high speed until smooth.
2. Transfer the mixture to a plastic zip bag and completely submerge the ribs in the marinade.
3. Marinate in the refrigerator for 12 hours or overnight.
4. Add the ribs right from the marinade to a hot grill in between 450° and 550° and cook for 3 to 4 minutes per side or until dark grill marks have formed.
5. Remove from the grill, garnish with sesame seeds and sliced green onions and serve right away.
CHEF NOTES:
• You can also add in 1 teaspoon of salt and 2 tablespoons of regular sugar to make the marinade more intense in flavor.
• The marinade will last up to 4 days if you choose not to marinate the short ribs right away.
• I like to move the marinated ribs around in the bag every 4-6 hours to make sure they are getting exposed to the marinade.
• Don’t marinate the ribs for more than 24 hours
I am Korean and I make Korean Kalbi all the time. I add 1 C shoyu, 1/2 c sugar, 2Tbs honey, 1 T sesame seeds, 1T sesame oil, 3 green onion leaves chopped, 4-5 thin slivers ginger, 2 cloves of garlic, 1 small sprinkle of chili pepper flakes. Marinate about 1-3/4 lb of ribs (1 tray). Soak overnight. Fry on the hibachi the next day. Ono
The Asian pear has enzymes in it that tenderizes the short ribs. There’s ready made marinade brand that I’ve seen on Coupang here in Korea that has pineapple in it too. Pineapple with its bromalaine levels up the tenderness.
I made this recipe for my mom for Mother's Day this year. She grew up in Hawaii, and has loved Kalbi since she was a kid. She said this was the best Kalbi she has ever had! It's the best I've ever had as well! Totally worth all the ingredients....it's AMAZING!!
I am Korean and this is now my go to recipe for Galbi. This is enough for 2 packs of costco short rib. I just double the garlic and follow the recipe. 😋😋😋
Perfect recipe!!! ♡ (I am from South Korea :D) my mother soaks ribs in the cold water + soju (korean rice wine) mixtures hour or two.. She does that to get rid of the smell of beef. :)
Thank you for sharing ♡
Thanks for watching! I made sure to consult with some good Korean friends to ensure I was keeping it as authentic as possible.
YOOO! I barely ever comment on any videos but I tried your recipe for a bbq. Damn everyone were licking their fingers man. Every single peeps at the bbq were asking for the recipe. At first i wanted to keep it a secret but i felt like you needed more views and thumbs up so i share this video.
Thanks a lot man
Thanks bro, appreciate you giving it a shot! Take all the credit I don’t mind!
I am Korean, and your Kal-bi pronunciation is pretty accurate. I'm impressed!
Just made these and it was delicious. I cooked for 10 of us so had triple up on recipe but did 10 pounds of meat. So good. Not a single one left. The Kiwi and Apple is a GAME CHANGER
Thanks for giving it a shot!!
Chef Billy Parisi
I just made these ribs for the first time ever. I followed the recipe per your instructions. They turned out absolutely tender and delicious. My girlfriend was in heaven over them. Thanks for the great recipe and your videos are awesome!
best regards
Julian
This guy is the real deal! Very authentic recipe. Cleaning the grill seems easier if I either spray Pam or oil yhe grates. Thanks for sharing!!
Been making Bulgogi for the family for years & my son's been asking for Kalbi. I've got 4 lbs marinating, using this recipe, right now, that I'm making tonight. Love Korean BBQ & the smell of this marinade is intoxicating.
Perfect
Just made these tonight. Chef, it was delicious. I followed the recipe exactly. They were tender and full of flavor. My picky family agreed. And we have kalbi all the time.
Some Asian markets sell these kalbi ribs in their own marinade.
Your recipe is heads above.
Thank you sharing.
Yep, I have used this recipe, w/ small amount of kiwi for tenderizer. I don't have Asian pear near me, so I use a semi sweet/ sour apple, otherwise the same, I only use brown sugar, no pepper. It's the bomb though, these are the best and everyone who's ever eaten them is FULL ON addicted! They're THE best!
Thanks for giving it a shot!! Nice job on making it work for you!
The fruits are the game changer for sure. Have used Kiwi as tenderiser a few times and makes a whole lot of difference
Used this exact recipe today. Can't wait till dinner tomorrow!!!!
Nice!
Awesome 👌
I love this video
Excellent pronunciation! Thanks for the video! I usually marinade them but send my hubby or call my brother to grill but today I’m on my own so cooking in the oven…
I bought some and will definitely use your recipe! Thanks
Oh, my it just keeps getting better and better!!!
You know I try ;-). Thanks for watching!
Thank you for putting the ingredients and the measurements in the description box in English
My pleasure, thanks for watching!
I made the marinade tonight. Can’t wait to grill the kalbi tomorrow.
I've made the recipe using huli huli sauce for the marinade then adding sesame seeds as a finish with green onions sliced, grilled over lump charcoal mmmmm da kine
Thanks so much Billy for sharing this Korean recipe. I subscribed to your channel now. Thanks again !
Bought the ingredients tonight going to prep when I wake up and marinate until dinner. I’ll let you know how it is 😊
Excellent recipe! I just grilled 3 pounds of Prime grade. Super tender. Great for a family bbq. Kids love them because they're easy to eat with your fingers. Also, make great lunch box leftovers for days.
Appreciate you trying it many thanks!
thanks for the video.
From the Caribbean and the medley of flavors in this recipe is similar in practice but different in flavor I would think. I welcome it. Looks amazing.
It’s really really delicious and probably my favorite style of ribs
I live in Hawaii and I love this stuff! My friend taught me how to make this. Yummy 😋... Thanks Billy! 👩🏽🍳🍷♥️
It’s seriously the best!!!
They taste soo good!
So good!!
Thank you Billy! Followed this recipe to a T. Amazing flavor! This is my go to for Korean short ribs! ❤❤
used this recipe to the T,and perfect.................trying the same marinade on chicken thighs tonight, had leftover apple, pear and kiwi.will let you know.
fantastic.
Love the recipe! In the future can you add an ingredient list to the description please.
Duuuude! I’m in complete awe!!! Love and respect from Andersonville😉
Thank you so much!
Chef Billy Parisi do you hold classes?
They look so yummy!!! Thanks for another fantastic recipe!!!!👍👍👍👍
They’re awesome, thx for watching!!
Dude just found your channel- You are AWESOME!!!! Nice work.
This recipe is definately going to be tried in my household Chef. It looks so different from any marinade ive ever made. Born n raised on Maui ive made some pretty "official ono-licious" marinades in my day, but these look amazing! Thank you! I think your fabulous!🌴🌺
first i tried them made by a korean woman . i flipped out wow i asked for the recipe . we have made them and they are very good but she nailed it . she told me some people use coca cola . i have also tried a pieapple soy marinade for the other cut of short ribs the fat ones . i have that with red garlic butter potatoes and cream corn its really a treat when done right ( broiled crisp) i just wish they were more affordable ... its some of the best beef imo .
Agreed, probably one of my favorite dishes ever but yup it’s pricey.
Thank you, you told what to do and not add your personality just what I was asking for
Can't wait to try this. Quick question, in your video it looks like you used a smoker? Is that what you recommend or a charcoal grill. Thanks
Oh heavens, this is one amazing recipe! Thank you for this!
Nice recipe :D
In depth, again very great. Made your Baba ganoush the other day and it was great!
Grilling on a charcoal fire with wood(alder, mesquite, cherry/apple)would be THE BOMB!!!
Desert with meat. Very sweeeeeeet
We love kalbi we have our local flavor in Hawaii. My hubs loves it so much.
Just found your channel, I’m glad i did and I’m also from chicago and i grew up going to the same market my dad gets his seafood there!
Just made kalbi a few days ago... definitely going to have to try the fresh fruit in the marinade
it's SOOO good!
Sorry am soooo late to this party! Question: would it be possible to freeze any part or stage of this?
.njammmmm thank you
2024 and I'm still using this recipe, I also use it for arrachera (skirt steak). My family and friends love my meat. 😂 Thank you chef for the great recipe! I do have a question, prior to this marinade, none of my local grocery stores had any good quality skirt steak, it didn't matter whether inner or outter. Regardless, of any marinade I use, it always came out chewy, dry, etc. I've always cooked them on a grill, high heat (no flames obviously). Point is, any suggestions where I can buy good skirt steak, at a reasonable price? I also live here in Chicago. Thank you again.
thanks
Ni e recipe :)
This is DAMN GOOD! Thanks!
Thank you so kindly!!
This Kalbi recipe is a winner! Tried it last weekend. I have one question, Chef Billy mentioned not to marinate more than 24hrs. What happens when protein breaks down?
Turns to mush
I'm sure by now someone has mentioned this, but to make things easier when putting meat into a ziploc bag simply roll over the zipper portion of the bag about 1-2" and the bag will stand up by itself. This also makes it so the meat doesn't touch the zipper portion of the bag.
I cut crosshatched on both sides of the ribs. The marinade can penetrate the ribs and makes them even more delicious.
Marinating ribs now from Joong boo ! Will see how they are Tuesday
THE BEST!! Enjoy my friend.
I live in Chicago. Could you please tell me where that market is?
Kimball and Belmont
Delicious! Recipe is similar to mine.😀
Have you tried Filipino chicken adobo? No marinating overnight
I made Kalbi ribs for the first time a couple years ago and they were great. I'm making them again today and I can't wait until they are done.
Don’t like to use Kiwi as it breaks down the protein quickly…but definitely use Korean Apple pear. Some restaurants also use coke yes Coca Cola…
When rinsing the Galbi in water, you don’t want the meat water logged. Rather just rinse under water along the bone and gently wipe downward to allow any bone shards to go down the drain…try to get excess water off the meat before it enters into the marinade..
Gotta try this. I'm still stuck make'n them like burnt ends, from the point of a brisket. I keep thinking, "it isn't broke, don't 'fix' it." lol thanks for the vid!
Will this work with a full rack of short ribs cooking low and slow? Marinade looks bomb.
That's a great question. I don't know to be honest, but there's always one way to find out :-)
Did u try w a full rack of so how did it turn out
Just anyone know if we can freeze them?
You had me at Joong Boo ! Chitown ❤️ Northside. I will be making these thanks for the tips . Have you been to Seafood City yet ? Love them as well (mini video tour on my Channel) . Some of the freshest fish I have found in the area . Subscribing 👍🏼.
Awesome! Yes love that place and live in the area! Thanks for watching, Happy New Year!
@@ChefBillyParisi Cool beans ! Im always excited to find a neighbor on here 😎. Happy New Year ! 🎊🎉
I can't believe you got a sear using a Traeger! Last time I tried that on mine it lit on fire. lol
LOL! Been there. I cook them at 350* for longer. No fires....yet. I haven't used his marinade but mine does have just enough sugar to get grill marks. But I do like to cook mine more well done and they taste like burnt ends. Not the char nasty burnt ends, like smoke'n the point longer to render fat and crisp up type.
The most authentic audacity😂.
Lol
I made without the fruit, I added thai chili to the blender to give a heat , so good...
Nice
This is so odd I’ve never seen a fruit marinade before for this dish. They also sells kbbq marinade at your local Asian markets as well which is really good.
McCarthy looking at this
COMMIES??!?!
It’s commis, and it’s a culinary term in French. Look it up
Kiwi has enzymes that tenderize. Great for marinating meat.
Indeed
Looks legit! My mom uses coca cola in her recipe. She says it helps with tenderizing the meat like the kiwi.
I’ve heard that too
Can these be made on the stove or oven? I don't have a grill :/
If one doesn’t have access to a grill how would you do these in the oven?
Broil, you'll have to keep an eye on them and keep flipping them to keep from burning.
I made this recipe a few months ago. It was too cold to use a grill so I followed Adam Ragusea's method of cooking them which was braising. You should go watch his video. I don't eat beef but my family said it was delicious. :)
The ribs are in the marinade, to be grilled tomorrow over charcoal. Marinade tasted great straight from the blender. Luckily I had all of the ingredients on hand except for the pear, apple and kiwi, which were a short stroll away. A good hot fire will be key.
Wait until you taste these, they are incredible!
Can you put them on the stove
I’d reduce a couple cups of the marinade and sauce those ribs up.
Cooking it Hawaiian style, they do add the sauce, some people add chicken broth instead of water to bring out more flavor. The pear already has enzymes that tenderize the rib meat, but the kiwi is more intense.
Dipping sauce?
Love Indian food 🍲
This is Korean
too funny
Your pronunciation of "galbi" was pretty good. Funny thing is, I can't make the same sound by manipulating my lips.
Try to read this: "Gahl - B"
I think I met this guy in Las Vegas a few years ago I swear.
I’ve only been there once and that was for the builders show.
@@ChefBillyParisi you look too familiar I thought I met you at a korean bbq\ sushi fusion restaurant maybe around 3 years ago.
ㄱ is 'g' ㅋ is 'k'. Galbi is '갈비' if it was 'Kalbi' it would be '칼비'
Can you marinate chicken thighs with this too?
You can, but I recommend actually not adding kiwi as it can cause meat to disenegrate.
It’s pronounced galbi, not kalbi
Try adding some pineapple to the marinade.
💋🌹🌹🌹🥇
Grate that Korean pear please
Not necessary
My marinade looked allot darker in color . I'd that bad?
nope!
thanks for the video. thought it was a little weird intro considering it was new to you as well, but ok.
my fraynd
Joong Boo is the best
Se ufa
Calling me a Comie 🙄🙄🙄
It's called kiwifruit, mate
Ok??
@@ChefBillyParisi Don't get it do you?
Too much yak.
Perfect amount
Too many ingredients for a simple sauce... don’t use this recipe people
Don’t be a hater Bobby. Tried this recipe and it is SPOT ON!
You’re right, if you’re looking for simple. But I rather have delicious ;)
How do you make your kalbi?
@@FERRELL9ca probably with salt and pepper
Bobby you are just lazy
