Unfortunately I have found Korean restaurants in the US to be lackluster when compared to the amazing restos in S.K. I agree, in the US they make a lot of dishes sweet that shouldn’t be. Thank you, Helen, for showing us how to do this at home!

I would use freshly grated/pureed apple (extra sweet and ripe apples) if you can’t get fresh sweet pears. I would not recommend using apple sauce since it is cooked.
I totally agree with your remarks about K-BBQ being too sweet nowadays. Went to a K-BBQ place last month in Atlanta, and all the meats and even some of the kimchis tasted too sweet. Didn't really taste like I was back in Korea. Disappointed.
I make this today. I use the flanken cut, which is the same thing. Marinate for an hour. I do a simple version. Soy sauce, black pepper, white wine, salt, garlic powder, hoisin sauce, syrup, and turmeric. If left it over night, it would have tasted even better. However, I'm hungry so an hour will do. Smoke it and it was perfect golden brown.

Great looking recipe. Some of these chef's kill me. Why would she think that it is necessary to wipe the the marinade from the inside top rim of the bowl?
Hi👋🙏 You don’t have to wipe down the interior wall of the bowl, if u don’t want to. I do it to keep it clean and tidy. Sometimes, after 48hrs, the interior wall with the marinade residue can look not so ‘clean.’ Again, totally up to you.

I've found adding a Fuji apple to the marinade increases the flavor profile.

I'm working my way up to make my own bbq sauce. Right now, I'm the non-Korean friends who buys the sauce that's sweeter in taste.

It’s called respect for food, and good hygiene.
It also helps keep the marinade from “osmosis” or rather seeping out under the plastic wrap and getting on the outside of the container.
