Si! Definitivamente se puede. Y creo que ya se qué pierna. Un tío argentino alguna vez también hizo pierna de cerdo para navidad con pimientos si recuerdo bien y ají y vino blanco o algo así. Voy a tener que ponerme a experimentar.

After you take the turkey out of oven, are you covering with foil?

You can to keep it hot longer. I personally don't but my whole family hates steaming hot food. Everybody prefers eating warm instead of hot.

Yes! You can use chicken. I recommend using 1/4 of everything in the marinate only because the chicken is much smaller.
