Spicy Cucumber Side Dish (Oi Muchim 오이무침)

  • Oi muchim is a Korean cucumber side dish (banchan) that’s spicy, slightly sweet and tangy! It's very simple but delicious with any Korean meal. Try it with your next Korean BBQ! It's easy to double or triple the recipe for a bigger crowd.

    Ingredients:
    8 ounces cucumber
    1 teaspoon salt
    1/2 teaspoon minced garlic
    1 tablespoon chopped scallion
    1 tablespoon gochugaru (Korean red chili pepper flakes)
    1/2 teaspoon sugar
    1 teaspoon vinegar
    1 teaspoon sesame oil
    1 teaspoon sesame seeds

    Thank you for this delicious recipe. I just got a baby Korean cucumber plant and wanted to make sure I had a good recipe for oi muchim. Hope it will grow well, I haven't eaten this in years. A dear coworker used to always bring this to potlucks and she never had any leftovers to take home.

    You have such a lovely calm style and so informative! I can't wait to try this out! I have a bunch of Harissa which I think would work as a substitute that I am going to try out in place of gochugaru for now.
