Following the instructions, each row that I knit seems to become larger than the previous one.. any idea on what I am doing wrong? Is it possible that I should be repeating row 1 without knitting the first loop of the first stitch alone (so basically repeat row 1 from the *)?
I'm finding this way too difficult - the yarn just doesn't want to come off the needle if I double wrap it, all that working yarn on the needle makes it really tight and I can't pull the stitches off the left needle. What am I doing wrong?
Well it depends on the yarn you're using. Some just stick more than others. Also metal needles will probably be easier to work with than wood or plastic. And this is kind of a finicky stitch as well, so it just takes a bit of practice to not wrap the yarn so tightly.
You only show how to add the extra wraps,and only show the knit side row. You give no indication of what to do on the purl row or how to handle the extra wraps.
does it matter if we cast on an even or odd number of stitches?

All the rows are knitted the same.
garter stitch has only knit,no purls. both sided knit knit knit :)

yes, you'll reverse the wrong side rows, so knits are purls and visa versa.
