Here's something you might try if you're felling a little adventurous in your cooking. My Southeast Asian wife introduced me to "fish sauce" many decades ago, and it is an essential ingredient in virtually every savory dish we cook. It is especially good in bean dishes such as you just made. It has become the secret ingredient for many top chefs now. Two tablespoons added in the beginning and it will bump the flavor up tremendously. There is no "fishy" taste to it after it cooks, as it is just pure umami in a bottle. Some brands are better than others, we use Red Boat 40°N Fish Sauce as it is considered the best. Obviously, you drop adding extra salt in the dish. If you google fish sauce you'll see hundreds of links praising its merits for cooking.

Pressure cooking my beans is the only way I cook them now...hubby doesn’t eat them, so I freeze portions for me and it works great...I’ve never used bacon grease but will definitely try that..
I grew up in pintos & cornbread, too....I love beet pickles & onions with mine...

It has become my only way of cooking my beans now....so much easier than soaking and cooking all day on the stove or crock pot....

I haven't made friends with my Instant Pot yet, but this looks like something I could actually make. Thank you for sharing. 😉

Looks good, Greg. I do love Pinto Beans. Instead of coming from a Southern background in making the Pinto Beans, I make them with a Mexican flare by adding about 3 Yellow Chiles (they may be called Banana Peppers...they are plentiful where I live because there is a large Latino/Mexican community here). For me, just the Pinto Beans, Water, Chiles, and Salt & Pepper after they cook. Delicious. Oh...I almost forgot...I also add about 3 large Garlic Cloves and a large-chop Onion to cook in with it, as well. Your Pinto Beans do look delicious, as well! .......Rob.......
