This recipe is amazing. I`ve tried so many others and never could get the proper creamy texture. Your recipe is so full of flavour, I`ve cooked it a few times and it is always great! Definitely using only Thai ingredients makes a huge difference. I would love to see a red curry recipe too!
OMG! After trying other recipes posted on UA-cam, this is hands down The BEST!! The changes I made was adding tofu along with chicken and more variety of vegetables. I used coconut sugar instead of Palm sugar adding 1/2 the amount due to health reasons. Same with the fish sauce. Still came out amazing! Very creamy. Thank you for posting this recipe!

At least one authentic recipe where they do not use chicken broth. In most places, they use chicken broth to save on coconut paste and cut down costs but also the authenticity. Good job. I wonder why you haven't got more subscribers? You have so many videos. Do you use the right keywords? You should do some research on SEO (search engine optimization). It will boost your videos and you get way more subscribers and views. I also think your videos are well made.
should we sautee the eggplant and peppers seperately before adding to the gravy, or any other vegetable (can we use potato and cauliflower in this curry once my chef made this curry for staff using all the vegetables )? because frying vegetables remove raw flavour from them. ,my chef used this process, he sauteed potato eggplant cauliflower baby corn and take in a plate, fried shallots and chicken, add curry paste fried it add vegetable and coconut milk and boiled it, finally topped with lime leaves and cinnamon basil.
No you shouldn't saute the vegetables first. You want them to soak in the curry. Also we never put potatoes in green. Only use potatoe in Massaman and Yellow curry. 🙂

Just after making this. Tried a bunch of other recipes from youtube before. I didn't have all the ingredients and this method is still by far the best one. I managed 1kg of chicken thighs (skinned and deboned so maybe around 750-900g). I had no basil and used lemon zest instead of lemongrass. I also sliced up a carrot instead of the aubergine. I think with basil it would be great but still I am so happy with this. Thanks for sharing!
