This is brilliant. I have to think that because it's pretty much the recipe I've been using for about 30 years, when I have the time. 😁😁 I like the clear way things are explained and the personality of the chef. Very good.
I worked with an American guy in the 1980s who had worked in Thailand for many years and who was married to a Thai woman. Her family owned one or more restaurants in Bangkok and he shared some of her recipes. A couple of observations: the bit about not shaking the can of coconut milk is very important. You need to mix in the thick part of the coconut milk first and then gradually work your way to the runny stuff. I think that it stops the coconut milk from splitting. Never, ever use a blender or food processor to make the paste. It cuts the fibres instead of smooshing them. We can't get the Thai eggpant/aubergine where I live (coastal NSW, Australia), so we use green beans instead. I think that I was told that white palm sugar is better than the brown palm sugar.

I love the round aubergine and always buy them when I can find them! The long thin purple asian ones would be a great substitute, but they take less time to cook! I can't wait to try making your green curry Pom! Thank you for sharing your recipe! =]

You can definitely find it in Chinatown, that's where we get most of our ingredients! - Lee
If you still can't find it anywhere (you're far from alone, especially if you don'nt live in London!) I have found bamboo shoots and a red bell pepper do the job just fine!

What type of shrimp paste, sautéed will be good?
Pretty standard recipe except it's missing nam pla and palm sugar. It's hard to find fresh Thai green chilies in S. California so I resort to a good packaged green chili paste.

Are there different types of Thai Basil? The one I bought in the supermarket in Bangkok seems to have a different taste. Holy, sweet, is it the same?
There's quite a few different types of basil in Thailand. Thai basil, or sweet basil, is used mainly for curries. Holy basil is a bit more peppery and used in stir fries (pad kra phao etc), and then lemon basil, or hoary basil, has more of a lemony flavour and is used in soups, stews and salads. All of these types of basil are used fresh and added to dishes towards the end of the cooking process to retain their flavor and aroma - Chris

@@lilychau1671 my ex gf’s mom, who was born and raised in Thailand, would put a cinnamon stick in her yellow curry. So that got me to try in the green, I like it.

Cooking in broken English reminds me of my sex tourism in Thailand
I wish I could buy all those ingredients here, but it's never going to happen. All the green curries from supermarkets are nothing like the real thing, it's so disappointing. The best I ever had was from the Thai Bird restaurant in Amsterdam - better than any I ate in 7 months in Thailand.
Are you sure you dont have asian supermarkets in NL/Amsterdam? Cant imagine you dont have any. The majority of the ingredients should be available.
