How to Make My Favorite Breakfast

- Don’t get me wrong, I love a good ole bacon & eggs with toast on the side classic breakfast, but sometimes you just need to switch it up a little bit. This is my favorite breakfast recipe simply because you can make it for just one person or an entire army....plus, I think it looks a little fancier than it actually is to make.
I’m sure somewhere along the line someone has made this or something similar before me, but I just came up with it one day out of the necessity of having to use up stuff in the fridge. It’s basically just a twice baked sweet potato and then throw in an egg. Let me know if you make it or what things you stuff yours with!

What a sweetheart! Erin herself is sort of a 'flavor'. She shines as a nice example of what the American Midwest can be. Plus, nutritionally this doesn't look half bad.

Erin I have never seen so many farmers getting so excited over your favorite breakfast. Being a farmer myself and a father of a daughter who is a Junior at Purdue so she is almost as old as you I think I better keep my eyes open the next time I take my daughter with me to a farm machinery show. Something tells me many of these folks ain't farmers. LOL

I was already modifying your recipe by changing the milk into double cream and adding some butter . On a serious note , thank you for reminding people to try and help out others that are less fortunate .

Growing up, I was the same way. People were always making sweet potatoes with brown sugar, marshmallows and whatever other sweet things they could put with them. Sometimes they called them yams (I called them YUKS). I grew up and they started making Sweet Potato French fries, I tried them and loved them, now I use sweet potatoes in other non-sweet applications as well.
Breakfast for supper is the best!

I'm just like you with the sweet taters. I never liked em when cooked with more sweet stuff.
Then I started growing taters and tried some plain, I luv em straight up. No need to add sugar, cinnamon or anything. My favorite meal is rib eye steak, sweet potato and fresh string beans in fresh garlic. What a combo. Ummm, heaven.
Very good ! I didn't like sweet potatoes, whole grain rice or pasta until I ate it for a while and now I'm fine with it.

They look really good, I’ll have to try that recipe. You know, if you want egg in the morning, just get yourself a small margarine container, crack it in the container, mix it around with a little salt, pepper or whatever you want, put in microwave for about a minute with a paper towel over it and they’re cooked. Take a tea spoon and run it around the outer edges and it should come right out on your plate. Cheers

Great video! I wasn’t too sure about the sweet potato thing for breakfast but you make it look like it should be pretty good. The piano background music does make me a little sleepy as I watch the videos though! If every person your age in this country was living their life and their beliefs like you do we would have one great place to live!

Looks like a wonderful meal. What I think would work great as additional ingredients is either some Gouda or Emmental cheese (or both if you're feeling fancy) and oregano. You can't go wrong with that combo.
When she said "God has given me a good life" I misheard it as "The dogs have given me a good life" and I was thinking "That's understandable, good puppers.. OHH"
