Tip from me: deglazing the pan with white wine gives the mushrooms a nice kick of acidity and also helps building that sauce.😊

Don't add salt until the end, and don't crowd the pan. The salt one is key, though.

Looks delicious! Only - where do I get the starchy pasta water from if I am not having the mushrooms with pasta?
I advice you to let reduce white wine, beef stock amd some cooking cream in the pan to get your mushroom sauce. No water needed!

@Jamie... what if I combine this with a classic cacio e peppe? When you started to blend that pasta water in the mushrooms, the idea just popped. I also add soft green peppercorn from Madagascar to my cacio e peppe. I'm into that next level shi.... i mean that next level cooking.
Oh yes! My favorite pasta dish (besides a good puttanesca ;)) I’ve been having fun with various peppercorns of late, I’ll have to look for your green ones.
Simple
I use this technique with Cauliflower and then scramble in some eggs. My wife loves it for late breakfast.
Dry fry the cauliflower then add oil / eggs ?
@@m.theresa1385 I pan fry the cauliflower in olive oil and seasoning (garlic powder, Italian mix) until they start to become fragrant and slightly brown.,Then I add a small amount of water and cover and steam for a little while (time will depend on amount and how soft you like the cauliflower) then uncover and add a some butter.. This will make a light sauce. Then fold in some eggs (scrambled in a bowl with a little Paorikam Salt). Stir the mixture continuously until eggs begin to set the remove from heat and continue to stir until eggs are done to your liking. My wife likes the eggs "soft".

How much mushrooms do I need for this recipe? About the same volume as pasta? 🎅🎄💋
