I had spent so long trying to figure out marinades and different things to get my carne asada tasting like the several "taco" shops in SD. But the secret to the traditional style we all love down here is the one you showed in this video, just the meat, salt, pepper, and garlic powder. So basic but so freaking good. Thanks for the great video, man.
I agree. The only thing I would change is to get rid of the fries. Meat baby! The pico de gallo is key and then I dunk mine in red sauce with each bite. Gigantic tortilla is also key to this. Should end up being between 1 and 1.5 lbs. Followed by a 2-hour nap. Repeat.
I first had a California Burrito from Santana's in 1998. I believe they were the ones who created it. Definitely an awesome burrito, now found everywhere in SD!

Stone is close to some killer places right on Rosecrans, just down the street. Or you can go to the Roberto's in Ocean Beach where this thing was born, about five minutes away. You're gonna love Stone Brewing by the way! Slater 50/50 is a must too.
Served in the navy, mid 90's, in San Diego Diego and I miss Roberto's and Alberto's so much. I got out and went back to Denver and everyone was saying "you have to try chipotle" after I did I realized they have never had a good burrito with a great tortilla. I don't think I've had chipotle since.

If I were in your shoes, I'd order this fixens to make your own tortillas online. They actually sell the mixes in dry form and the tortilla presses are pretty affordable. Nothing better than a tortilla hot off the press Craig!

My version of Ca burrito is a bit healthier as I grill the neat usually chicken because I'm not a fan of beef I marinate the chicken overnight and grill it. I cook my fries in the oven do it has less fat. And I use whole wheat tortilla !

Yes, you can "butter" t. .e center of the tortilla with the refritos. Just about a tablespoon full, maybe a little more. all the juices mix to make it really rich!!!!
I live in England and the burritos I get are just wraps. I was interested in what an American or Mexican burrito was actually like, I was not disappointed and I'm now very hungry. Great video, even if you do call the chips French fries :P
There are so many variations on the burrito here it's hard to keep track. Just look at as many recipes as you can and pick your favorite ingredients and go to town. The best thing about them is that they're very difficult to screw up.
I had the nickel plated griddle custom made. 3/16" steel cut with a waterjet and then had it plated with four layers of nickel. Used a local fab shop to have it cut and had it plated by Pacific Plating here in San Diego. The cast iron grates are made by Craycort. If you google em' their site is the first one that will pop up.
making this tonight with chicken. I have a daughter that doesn't eat red meat. It is snowing here so I am making it in a cast iron skillet. never had fries in a burrito before, but it sounds so good!
I may live on the east coast but I know where all the best Mexican is from Oceanside to Dan Diego. Several in O'side alone are awesome... used to live there... I found a place here that does a great job so eat there when I can...Stay Safe and keep grillin'... Ed...
I'm all the way out in Texas now and God knows I can't stand texmex even when I was in San Diego (places like On The Border. Ew ). Luckily I learned how to make most San Diego style Mexican and Chinese food before leaving.... but it's always refreshing to see you videos that remind me of home

Looks good!! only difference i do it with what we call "arrecherra", flap meat. With a lil lime juice,salt and pepper for the meat. the crema is money!! I was always told the Santana's on Rosecran's was the original Cali burrito, doesnt matter, im just glad we're spoiled here in SD

I've eaten my weight (and that's a lot o' weight) in these burritos from Oberto's, Alberto's and maybe even Abierto's (can't remember...it's been 16 or 17 years) since I was in SoCal... Serious good eats...you find this on the Food Network!

I had a local fab shop cut the 3/16 steel, then had it plated. Real fun to cook on.
