He made a legit burrito but he's missing some things. I grew up in San Diego. His steak isn't chopped fine enough or seasoned enough, gotta chop it on the grill with a sharp metal spatula. The potatoes are usually more like french fries, the guacamole is usually much higher volume. An important element is also the hot sauce. Usually made using japones sometimes guajillo peppers and after each bite pour it across the toppings on every bite, wash down with horchata to counteract spice. Absolutely delicious. Every taco shop does it a little different, his version is a bit fancy for the taco shop experience.
I’ve been cooking professionally for 37 years. I find it very admirable that you apologize to the close minded, vanilla, so called foodies, who are going to say “that’s not a California Burrito”! Looks delicious and who gives a shit what people say. Tots, what a great idea!

Lived in San Diego, California for 16 years. watched Sam on TV when he had his cooking show. I even saw him in a grocery store. Yes this is just a different version of a California burrito. What makes a California burrito would just beat the potatoes. What he made looks absolutely delicious. And he's correct the...Store-bought tortillas are terrible. But being in San Diego, you can find homemade tortillas everywhere. There are places making them. And you have to have the huge one. Sunday mornings I would get up at 9 o'clock. Go to a local taco shop. A little hole in the wall. Get my breakfast burrito. Eggs copious amounts of cheese, bacon potatoes extra salsa on the side. Head on home open up that burrito and watch NFL football at 10:30 in the morning.
