      Miranda .. thank you so much for your vegan extreme budget meals. I need and use them every day. You once did a video where you gave us a month grocery haul for $50 and meals to make from it. I wrote the grocery haul down but forgot to record the name of the video and cannot find it after searching. Can you help me?

    Instant ashed potatoes can be used as a great thickener to soups and stews as well. Thats mainly why we keep them in the pantry. 🥔❤️

    I just wanted to say, Thank you for your videos. Since my children have grown and do not depend on me as much, I have been trying to find ways to take care of myself; your videos have helped me find Joy in being in my kitchen. I also had lost 40 LBS on WW and was getting bored on that diet. You have helped me find a way to simplify my diet, lower my food budget and enjoy being in my kitchen again. Thank you!!!

    Instant mashed potatoes are really handy to have on hand. They can be added to soups to thickin them, they can be made into potato patties, they can be used for breading for bean burgers or a binder for bean burgers.

    My favorite way to cut mangoes is to cut it in slices out you did but rather than use a knife I run it down a tall glass and use the glass to split the flesh from the skin!

    You should try making Borscht (beet soup) it’s all veggies and broth. My Grandma used to make it and I remembering it being good, I need to try making it!!

    Mango cutting tip! I cut a mango into three pieces with the pit (look up pics to see where a mango pit is!) in the middle piece. I then use a spoon and scoop out the mango from the peel/skin. After the mango is on it’s own in a few big chunks, I cut it into pieces!
    I find this way let’s me get as much mango away from the skin as possible. Sort of like how you scoop out an avocado to get all the flesh!

    I'm newly plant based and have been binging your videos. I can't wait to try these recipes. I'm going to go to Walmart and buy the ingredients since I don't have a whole foods by me. I bought your cookbook last week!! I made the creamy buffalo pasta with chickpeas and spinach (I didn't have celery on hand). It was so good. Everyone at work commented on how delicious it smelled.

    There's a Whole Foods within walking distance of my place but I try to go there only when I need items that I can't find at any other grocery store. My favorite items are the Stokes purple sweet potatoes and the Japanese sweet potatoes. I'm so glad you included the purple sweet potatoes in your video! Thank you for the tip about the coconut milk too. I always think of Whole Foods as being more expensive than other stores so it is helpful to know that coconut milk is probably cheaper there than at regular chain grocery stores. I use coconut milk often in cooking -- especially in the winter when I make vegan hot chocolate.

      I love sweet potatoes and getting different types seems so fun!
      And yes!! If you take the time to look, coconut milk and other bits and bobs are cheaper for us! Even garbanzo beans (can) are the same price for us at whole food as Walmart! 79c! Its definitely a more spendy store but some little things are worth the trip!

    You can also try using beets if you are going for a bright color and can't find purple sweet potatoes.

      Yes If you like beats! For the color they’re great, but they’re very earthy and don’t match up for the taste of this dish!

    Wait! I didn’t see the Ohio shaped cutting board. That one is so cute! The one your BIL made is gorgeous. I would be scared to mess it up too, but hopefully he would make you another one if something happened. It’s too pretty not to use!
    I will have to check out Whole Foods when I go to Chattanooga (assuming they have one). They just got a Trader Joe’s, and I have been really liking that one when we go to that area for appointments. I think it’s great that you shop around, and do different videos for different stores! Thank you for taking the time to do that. It’s definitely applicable to most any grocery store. We have to drive 25 minutes to get to the nearest grocery store. We live in the COUNTRY! 😂 There is a Dollar General (those things seem to be popping up like weeds around here lol) but no fresh produce. Bummer.
    You may want to consider stocking up on staples in your extra cabinet space. They keep talking about rising prices and shortages on food coming. Just an idea. 😊

      I do use that cutting board from time to time but I prefer my larger one! It’s easy to whip out and chop everything at once on a larger space!
      And as for stocking up on pantry items, I don’t ever see me changing the way I shop 🥰 I studied economics for 2 years in college before switching majors and one of the reasons why grocery prices are going up so quickly is fear. Supply and demand. Our supply chain was broke in 2020 and prices had to rise to meet the demand and if everyone starts shopping out of fear we have two large issues at hand:
      1- prices will rise faster. The quicker the shelves empty the faster they need to restock and that’ll keep adding to the rise of prices
      2- people who stock up now at a certain $ are going to have to eventually buy groceries again however if they’re cost of living isn’t rising along side the cost of food they’ve actually put themselves in a worse condition because now their budget greatly increases instead of slow and steady.
      We’re really fortunate we paid off ALL our debt and put ourselves in a strong financial position. I don’t have to spend $50-$75 a week on groceries but I choose to because who doesn’t like to save money?!🥰 I know we have our own future goal to adopt and I like to be able to save for that and vacations and to give back! So for me cutting back on groceries is a way to be creative but again not out of need

      @@flourishingmiranda That is interesting about the economic fluctuations! We live so far from grocery stores that I always remembered my family keeping staple items on hand. If an item was out of store, then it would cost us an hour of time plus the gas to have to go back. We usually buy extra when there is a sale price. So, for example if beans, rice, canned veggies, etc. are on sale then we try to buy enough to last at least a few months until the next sale cycle. I guess maybe the difference is that you live in a big city and are comfortable with the choices and availability that you have around you. For me to get to a city with options like that, I would have to drive at least an hour one way. Just the nearest Walmart is about a half an hour away (and that’s with a 65 mph speed limit to get there).
      I agree that the supply chain has been broken. They are predicting it will get worse before it gets better. That remains to be seen though. 😊
      I have been following your channels for quite some time and use your debt- kicking story as motivation for getting mine paid off! I am happy to see that you are in a great financial situation. I pray your future only continues to grow brighter! 😊❤️🙏🏼

    I rarely ever get to shop at Whole Foods. I live in the Texas Panhandle between two WF both 4 hours away either in Oklahoma City, Oklahoma or Albuquerque New Mexico. The closest one in Texas to me is 6 hours. I will definitely be trying both these recipes.

    I love the Whole Foods Artichoke & Spinach dip, use it as a filling for wraps with some bell pepper strips and baby spinach leaves or toss with pasta. My teens love the taqueria salsa.

    I am definitely gonna make that sweet potato soup but instead of using actual coconut milk I think I’ll use oat milk and add a little coconut flavoring to reduce the fat that was absolutely beautiful

      I just heard that hack for replacing coconut milk the other day. Have you tried it before? I haven’t made a recipe that calls for it yet to try it, so I am just curious. 😊

      We’ve used coconut milk (silk brand!) that is 50cal per cup before! Still has wonderful flavor and super creamy!

    Hi Miranda, have been enjoying your videos for a while now. I live in North Central Florida and the closest whole foods is 35 miles away. Amazingly, until recently Amazon would deliver to me for free. Even now that it costs $9.95 there are still some things that whole foods carries that I can't get anywhere else. Whole foods has the best price on short grain brown rice which is my favorite rice next to good old plain white rice. Whole foods 365 brand of fat-free marinara sauce is another item I can't find anywhere else. Beets, raw beets, are less expensive at whole foods then they are at other grocery stores. Oddly enough Dr McDougall's dried black bean and lime soup (lol, dip) seems to only be available from whole foods. Right now and then I can find it elsewhere but not reliably. And the frozen vegetables from whole foods actually come in a 1 lb bag not 10 oz 12 oz or 14 oz. I think that none of these are candidates for your budget-friendly meals but you asked what our favorite whole food items are. Love the idea of using whole foods instant mashed potatoes as the basis for a soup. It's the only brand I can find that doesn't have a bunch of other things added, it's only potatoes.       I find a lot of odds and end pantry items like coconut milk, can beans and the like that are cheaper at Whole Foods than anywhere else!! It’s a great store and I love that even on a budget you can shop and eat will there!

    I love Whole Foods videos! I am kind of a Whole Foods shopper - they are everywhere in Austin, hard to avoid. I live near the corporate headquarters Whole Foods which has a 100% vegan burger restaurant inside. If you ever visit Austin, check it out :)
    Your purple curry looks so yummy and so creative. The minute I saw you putting purple cubes into a pan in the beginning of the video, I got excited.

    Japanese Sweet Potatoes! Omg, so good. My favorite sweet potato. They are sweet but not as dense as a typical sweet potato. I will say that at our Whole Foods they are $3.89/#. I was able to find them at an Asian grocery for $1.98/#. Love your videos and I am so happy that you are enjoying your new space ♡

    That purple soup was absolutely beautiful! As far as the mangoes go, lol. I’ve never seen anyone cut a mango like that but there are many ways to cut mangoes. Usually, though, you start by slicing it the opposite way you did. You slice on what side of the seed and the on the other and you end up with 2 sides that look like little bowls of mango and the seed part. My mom used to eat the flesh around the seed over the sink while we ate sides with a spoon.

      The “malk” vanilla almond milk is my favorite treat! It’s delicious in oatmeal and in overnight oats.
      A bit pricey, but is marked down sometimes 😉

    I peel my mango with a potato peeler and then cut it similar to how you cut yours.
    I dont shope at Whole Foods but my grocery bill has doubled in cost because of this inflation. Its nuts!!

      It's so good! just a whole different world of color and taste! Our grocery prices have raised some too but tbh I have not noticed as much as I would have a year ago! I have more $$s in my budget than $30 and often time we're just eating basic beans and rice so I will save prices are up but with shopping multiple stores I can make it happen!

      I’ve contemplated doing a full kitchen tour! pantry, freezer, fridge, storage etc but -- I’m a little worried because 85% of my cabinets are empty and I think it wouldn’t be very fun to watch! We have so much space and very little items!

I need to seriously declutter, but I have so many pantry staples and we never throw stuff away 😂. I could basically live off of my pantry with my entire family for a month or 2. If I wouldn't crave salad every day, I wouldn't need to to go a grocery store for a ... Very long time 😅.

    Instant potatoes can be used for sooo many things! It's a great thickener (as you experienced) which you don't need to add any fat to and has a neutral flavor, unlike flour. You can mix it with flour and make potato pancakes. Make all kinds of chowders. I love them. And it helps that my best friend works at Idahoan. Lol! My favorite thing at Whole Foods is their 365 brand frozen vegetables. They're all great quality. I was actually surprised at their price. Some are cheaper than Walmart. And I haven't found the roasted corn anywhere but there and Trader Joe's. That's my favorite, but hubby doesn't like corn that much. But I use it anyway. Lol!

      YES! This is such an important reminder- sometimes little things are cheaper at other places than Walmart! I notice frozen veggies, can beans and little bits cheaper at Whole Foods! Like the coconut milk!

    I've been a devoted Whole Foods shopper for years, only shopping there exclusively. They've recently been increasing prices on many if my favorite 365 brand products, my favorite bakery goods, etc.
    I've just started shopping elsewhere.

    I love the idea with the mashed potatoes and coconut milk,I want to make it😀 but with real potatoes(not a fan of instant mash).I peel my mangos like a potato and just slice it into pieces.Thank you for the quick and easy meal preps❤🤗

    there are so many kinds of Dutch ovens. is your a cast iron Dutch oven? I have 2 different sizes of cast iron Dutch ovens. the bad thing is both are red. :) I purchased one and my daughter got me the other one for my birthday. I love all kinds of Dutch ovens. there great in the winter months,

    Oh my goodness I haven’t watched you (took a break) since august and I was one person that asked about gluten free on a budget ! Oh my! Lol! What made you go gluten free !

      I have always had tummy issues, but noticed it way more when I went plant based. I have a friend who a a registered dietitian and she made an IG post about gluten sensitivities and it all was red flags for me! Anyways long story short I started working with her and we removed gluten and did small reintroductions and found I am very very sensitive. Not celiac (I had a blood test!) but def the tummy issues are from gluten!
