This made me smile when I saw you taking the stalks off the mushrooms. I used to go shopping and pop in and see my Mum and Dad on the way home. When I got home, I would find that my Dad had snaffled all the mushroom stalks….he loved to eat them raw. Happy memories 💕

You made the risotto as we do in Italy ! In the tradional recepe we do use butter and no oil : it's a dish from north Italy where butter was used more than oil because it's a cold area where you don't grow olive trees. The rice used is either Arborio or Carnaroli and we don't like the grains too soft, that's why you stir it to keep the grains harder and you cook it for about 15/20 minutes . And the wine, of course ! I use the Italian ones , as I 'm Italian and live in Italy ... but the most important thing about the wine is : it must be good , regardless where it's from . Boun appetito from Italy

Looks absolutely delicious, especially the mushrooms! I like to sprinkle a mixture of shelled sunflower seeds, pumpkin seeds and hemp heart seeds on some of my rice dishes. It adds a wonderful crunchy, salty taste that I love.

I cook about the same way as you do, eyeballing it and throwing in something that loods good. Most of the time it works out fine.
I love visiting and "chatting" with you. Even if it is a little one sided. I am a watercolor artist and a maker. Your videos are like a visit with my mom or my grandmother. They were both makers and saved all sorts of bits and pieces which I have now along with my bits and pieces. At 67 I doubt I will ever get everything made that is in my mind to make...oh well.

Yes, it's a hard transition. I make all my own food, and the neighbors get samples! That keeps me interested and eating well, despite now being just one at the table. Just remember you're worth it!

My grandmother taught me to make Rissoto Milanese. Italian thin sausage, mushrooms, butter, saffron white wine and Italian rice. Chicken broth too. And of course grated cheese.
You just made your dinner and recorded. But this was so peaceful and relaxing to watch. It looked good and filling but you could have made anything. I just enjoy your company and hearing about your day. 🤗

risotto is "always family meal" optional vegies, seasonal. We factor in WAY more butter, Way more "stock, in our family chicken stock", Way more dry white wine. Slow, slow, slow, "embrace ( love the "rice" )".... herbs just as serving. Mushrooms Yummmmmm, carrots in w/celery onions, endless variety! Hope you "pan fry" for second meal!.... family favorite "more so than first night". From Northern California Wine producing family. We DO SUPPORT AUSTRALIAN, NEW ZEALAND wine, all one family (really....as growers, producers, imbibers, joy of grape juice).

I'm with you about mushrooms, Kate. LOVE them in salads, omelets, sauteed with onions to top steak, chicken breasts or pork chops (not being vegetarian)...and in soup. There was a meal my late mother & I LOVED of a Sunday lunch after church years ago: wild mushroom soup, foccacia bread and a glass of red wine. When she died, my sister and I went out to the restaurant that made this delight, and had it in Mom's honour. Mmmmm...I can taste it now! :-)

Risotto - one of my all time favorites, and mushrooms are wonderful in it. I am pleasantly surprised to see that the cup you are using to measure your risotto is the same as two I have. I love them. What’s surprising is that you are in England and I am in Alaska, USA. Small world.

Yum! That looks delicious and on one of your own plates I think. I cooked ricotta and spinach ravioli (frozen)and had it with red marinara sauce with chopped kale...sprinkled with asiago. The trick to watching one of your food videos, Kate, is to have something ready to eat so I don't yearn for a taste of what you have created!

yes - I like to watch it - along with the sewing one and the baking one - but - with all of them I have a problem - no-one ever makes any of these things against the clock - so I get quite cross when they do that 'count down' ...... 'you have 15 minutes left!' I would never try to ice a hot cake, or put in a zip, or finish a piece of pottery with the clock ticking - so they make me quite cross! I still watch though! xxx

Oh mushrooms in risotto not unusual at all. Love them fried with butter and oil, especially portobellos. I was surprised by the fish, for some reason I thought you were vegetarian, as I am. Agree on cooking for more than one night, just makes sense, and it’s like a reward on those nights not cooking. Love your channel. 😊

I use old manual coffee grinders for my peppercorns. I cleaned them by grinding coarse salt.

Risotto - one of my all time favorites, and mushrooms are wonderful in it. I am pleasantly surprised to see that the cup you are using to measure your risotto is the same as two I have. I love them. What’s surprising is that you are in England and I am in Alaska, USA. Small world.

Yum! That looks delicious and on one of your own plates I think. I cooked ricotta and spinach ravioli (frozen)and had it with red marinara sauce with chopped kale...sprinkled with asiago. The trick to watching one of your food videos, Kate, is to have something ready to eat so I don't yearn for a taste of what you have created!

yes - I like to watch it - along with the sewing one and the baking one - but - with all of them I have a problem - no-one ever makes any of these things against the clock - so I get quite cross when they do that 'count down' ...... 'you have 15 minutes left!' I would never try to ice a hot cake, or put in a zip, or finish a piece of pottery with the clock ticking - so they make me quite cross! I still watch though! xxx

Oh mushrooms in risotto not unusual at all. Love them fried with butter and oil, especially portobellos. I was surprised by the fish, for some reason I thought you were vegetarian, as I am. Agree on cooking for more than one night, just makes sense, and it’s like a reward on those nights not cooking. Love your channel. 😊

no - I think I am too far north - not a long enough growing season - though I might be wrong - Jerusalem artichokes I can grow - an entirely different plant! ha ha! xxx I hope you are recovered from your travels and have some fabulous Swedish memories! xxx

Hi. Yum Yum food in my tum. I love risotto you can add lots of things within reason but i can't stand mushrooms on there own but added to things well chopped & i'm okay with them. Not often we hear the cats meow lol. Tfs. :):)):)
