Wind is your best option. Direct sunlight can be harsh. ( So I try not to) in saying that I have seen in tropical areas drying fish in direct sunlight. And that was fine. In this case you are trying to dry it out. So it will shrink up. It is not breaking down, just shrinking. To much shade in the colder months will cause mould. So warmer times of the year and wind will stop that.
