Plus, when I saw that you put it directly onto the work surface instead of on a plate, I did the same thing letting the edge of the rice paper hang off the edge of the table so that I could easily pick it up. It also helped to see that you took your time once the rice paper was on the work surface instead of treating it like it was urgent to get it filled right away. On top of that I'm on the verge of a nervous breakdown when fighting the wet ricepaper for ever single goddamn summer roll. When I'm done after about two hours I need to rest and take a nap and I'm done for the rest of the day. I'm not joking.

Oh my god. I should have watched this before attempting it. My rice paper rolls were AWFUL. I filled up the entire one side of the paper and tried to roll it like an imbecile. It was horrible. But I convinced myself what I was doing was sophisticated and delicious. All the food instantly fell out the rolls and I was dipping them in Goma sauce, but everything ended up in the goma sauce, so I ended up just mixing everything and the goma sauce, making a big bowl of destroyed paper rolls and goma sauce.
Thank you very much for all the techniques and tips that you shared. I'll be having my nonalcoholic beer or wine on ice as I practice making several of these rolls.
