Hi Jiles, that’s correct no need to cook the chorizo as its a cured meat. Once it’s warmed through it releases all of it’s delicious juices, which spread on the cheese and bread. Ahhh it’s delicious. The only thing I would stress is use good bread. Makes all the difference. I used sourdough. That’s for watching and subbing. Much appreciated 😊
Yup 👍 you’re right. I’ve been doing this now and it’s effective. I used to place washed herbs in a clean tea towels and tap till dry. I suppose Kenji s method is better when using small quantities. 👍

I prefer to call it charred lol. I left it pressed in the pan for 30 secs too long. It was still an incredible sandwich though. The toasted buttery sourdough bread is what makes it special. And the grated chorizo is a neat idea.
Thanks Gabriel, appreciate your feedback. I realised it was cilantro shortly after filming. The buttery toasted sourdough makes this a great grilled cheese. Grating the chorizo instead of slicing is a game changer.

I think Kenji used cilantro not parsley

Cilantro would have worked also. The parsley 🌿 adds nice colour and freshness. Good quality sour dough bread is key and the grated chorizo is genius 👌

It’s cilantro not parsley I’m pretty sure
I used parsley from my garden. But cilantro would work also. Cilantro is my favourite herb. We call it coriander in UK 🇬🇧
