Late night kimchi grilled cheese

- I was hungry so I made a grilled cheese with kimchi. Cheeses are Tillamook extra sharp, parm, and Kraft Deli Deluxe. I like to mix the kimchi juice with butter then fry the sando in that for some built-in kimchi flavor. Sauce is gochujang mixed with deli mustard and olive oil. The bread is homemade. No, I'm not interested in your grilled cheese/melt copypasta.
I know this is going to be fire when I see "Late Night"

As much as I love hearing you explain what you're doing in other videos, I can't tell you how much I enjoyed hearing nothing but kitchen sounds, that grunt/giggle of satisfaction, and that incredible crunch. Definitely going to try that gochujang & mustard sauce!

As great as your other videos are, I think a lot of us actually really adore your late night videos more. No talking, just doing and watching.
I’ve made kimchi grilled cheese so many times and had such a feeling of validation when you fried the kimchi first cause I was like “oh shit, he did it too so it must be right!” Then you added the kimchi juice to the butter and I was like “oh, there’s definitely levels to this.”
I feel like this was a bit of a dig at Gordon's "grilled cheese" and I'm so glad you did it. lmao.

I think a grilled cheese is perfectly emblematic of the types of things I want to see you cook, Kenji.
Not because it's comfort food, but for the details in the simplicity. I feel like that's where you really shine.
Giving the kimchi a quick fry then adding it to the sandwich promotes faster melting and probably makes the kimchi a bit drier, subtle smarts. Frying the sandwich in kimchi butter? Next level. That dip? Perfect. I hope you were super tipsy when you made it because that’s excellent post-drinking food.

also fried kimchi has a completely different taste profile to the stuff directly. just the other day i had the idea to fry some and dump in some other random leftover vegetables and old rice and my god. it was bomb

He made it with well-aged dry cheese then cooks it over a ripping-hot pan on an open flame, causing the bread to burn and cheese to be entirely unmelted. Gordon acknowledged neither of these things, and naturally, said "Wow, that's incredible. So good." Now you're right that we're not professional chefs like either of them, but I'm going to guess that I wouldn't have liked Gordon's :P

That is INSPIRED! Straining the kimchi but toasting the bread in the a little of the juice is such a great way of imbuing the entire sandwich in its flavor.
My family used to make sauerkraut every year and when I was stationed in South Korea I absolutely fell in love with kimchi. I legit might go buy everything to make this sandwich!

1. Thank you for the shade against the gatekeepers of r/grilledcheese. If JKLA calls it a grilled cheese, I’m good with that, since his toenail clippings have more culinary experience than I do.
2. I just made this. My cheeses of choice were smoked cheddar, low moisture mozzarella, and pepperjack. My bread was my wife’s homemade sourdough (this is a wonderful thing), and the kimchi was her homemade kimchi (also a wonderful thing). Followed everything you did, then grilled it in the air fryer. I used WAY too much cheese, so some leaked to the bottom. I scooped that up and spread it on top, which is truly as amazing as it sounds.
Thank you for this inspiring and easy-to-make dish. It was delicious!

@@alanuszhangus it stains and scents the board a lot, you lose liquid too. much easier to dump it in a bowl and chop it up with scissors - see the kimchi ideas video from Aaron and Claire for this
