I would be tempted to aim bit high with the dorsal gun. The forward-firing guns will include an elevation correction for the “convergence” distance set, but no such setting for crew-served weapons. That said, I think your statement about accuracy is on point. I seem to recall complaints early on that the Peshka defensive guns were being too mean to fighters, and there was an accuracy nerf.
I noticed on the bomb site when you dropped the bomb bay door was set to close, that doesn't affect anything? Maybe that was why your bombs dropped long, doors had to open first. Also - you should try using your FF MG on the 109s when they zoom past you, can't hurt eh.
Interesting point on the doors, will check it. I suspect its more to do with the relative wind direction dial only working in increments of 5 degrees. Also speed dial works in increments of 10 km/h.

I bet there is a short delay while the door 'auto open' when you drop the bombs with the door selector in closed.
@weasel6535 there is definitely a delay between the button press and the bombs being released from their racks so I will try releasing a bit earlier
