My mother would fry the gar balls just like you with a lot of green onions and then add them to a brown gravy. You look familiar. I've lived in Louisiana all my life. Keep up the great video's

I was raised on cajun cooking in louisiana as a kid back in the 50's and 60's. I moved to Maryland due to a job I git, and darn I sure miss my back home cajun cooking. Thank you for bringing back all those great memories.

I live in Okahoma, born n raised. I made many a visit to LA with my friend to visit his folks, and ALWAYS, mom made gar balls for the day we showed up! Man I miss those! Looks sooo good!
your video brought back a lot of memories. my aunt used to do balls. however she held nothing back. no matter what meat it was from turtles to gar. she made balls out of it all. she would scrape the bottom out after frying to make gravy. god bless and keep yall
You can skip the step cutting off the head and cut the skin down to wear its opened up like wings and make a little slit and run your fingers down the ridge and the meat comes almost off then cut the rest of the way and pull it off. I was amazed the first time I did it how easy those filets just come right off and boneless
Hey Kendall i live in Canada but have friends there in Chauvin. Been watching your videos for sometime now and may i say the things you create make me hungry. Great job on videos. Keep them coming.
My daddy made a board similar to the one you used. It fit across the gunwales of the aluminum boat we had. He would clean the gars on it while we were waiting for more gars to hit the net (this was back when you could gill net them in south Louisiana). My mom would make the gar balls, roll them in a little flour and pan fry them then make a gravy from the roux formed from the flour falling off the boulettes. Eat that with some rice sa c’est bon!! We would also take the filets and just season them and pan fry them. Much better than frying in fish fry. Also, if you catch a few take a spoon and scrape the bones, you’ll get more meat for the boulettes. Enjoying the channel.

I wish more people start to eat Gars. These fish are normally abused by fishermen. After accidentally hooking them, people just throw them on the rock to let them rot, what a waste of good protein!

When I used to fish at the Everglades when I kid with my grandpa he told me that gar wasn’t good to catch. I wish he was alive so that we could watch this video together. My thinking is that maybe it’s a lot of work to prepare and he didn’t want to mess with that. Awesome video

I just take a carpenter’s hand saw and cut crosswise 2” slabs. Then it’s easy to take a knife to cut out the meat into steaks or grind into gar balls.
