  • Most people have had nachos, but have you had griddled nachos? I wish I could say I invented them, but I didn't. A local brewery used to make these & took them off the menu so I now have to make them myself. Hope you give them a try!

    8 oz/226 g sharp cheddar
    8 oz/226 g pepperjack
    pico de Gallo
    refried beans
    pickled jalapeños
    avocado crema
    1 ripe avocado
    1 cup/240 g sour cream
    1/2 cup/120 g milk
    1/2 bunch cilantro
    juice of 1-2 limes

    No joke, I started grating cheese like you said and it’s been a whole new experience. Now I don’t have to fight with the cheese and I can eat more 😂

      I’ve never made them this way, but the essence of properly layering the nachos is KEY

    You’re the one who taught me to put cheese on the BOTTOM of my oven nachos, which was life changing! This technique, though… is NEXT LEVEL! Definitely trying this tomorrow!

    Great video! Love your content Frank … well done! Question (I already know the answer “do it the way you want to do it!”) … why not add the pickled jalapeños to the chips on the griddle so they get incorporated into the melty cheese?     The avocado crema could go in a bag, cut the tip and spread it as lines... a lot better (hmmm maybe you can do the same with the frijoles with a bigger cut in the bag) -- exquisito, gracias chef

    Great idea! Couldn't you do this in a non-stick pan instead of a griddle as well? I don't think I have place in my kitchen anymore for another gadget...

    I prefer to make a mornay sauce and have it in a squirt bottle along with crema. I find that having chips stuck together can be frustrating to eat. Never made them on a griddle before, will have to try that!

    Chef Frank, do you go to restaurants often? If so, when you get your food, do you think, it's good/bad, but I can make it better at home. Are you over critical perhaps? :)

      I, an adult, LOVE nachos. I make them once a month at least in the oven. Quick easy dinner you can load with protein and veggies and the kids love it. Thanks Chef!

    Except for the guest who uses one hand (beer in the other) and pulls the whole thing off the plat onto the floor because the cheese has the whole mess glued together. I like this one in theory, but not in practicality. This is great as a snack to share with one or 2, but I wouldn't serve it at a party. Great as always Frank
