It seems like everybody is looking for cheap meal ideas these days, but I feel like you don't have to sacrifice flavor or variety when you're on a budget. You can still have palatable meals that fill the belly, and I think these are some ideas that are a little more "outside than box" than your standard beans and rice meals!

    OMG! Mindy, you made FIDEO!!! I am so proud of you! You did a good job by toasting the noodles. I hope you don’t get any negative comments or haters. If I made my mom’s exact recipe she would find a way to criticize it. Just the way some people are. My favorite way to make Fideo is to toast the noodles, then add onions and garlic and sauté until soft. I will then add a can of Rotel, 1-2 tomato bouillon and a can of spicy charro beans. I will add water using the Rotel and bean can. I add water according to whether or not I want soup or a dry pasta. I then add the noodles, cover and simmer for 15min. Sometimes I will add ground beef or chicken, but with the beans it’s vegan. FYI, there is a decent recipe on the back on the yellow FIDEO box. I hope everyone remembers that you cooked this with a mother’s love, and that is the most important ingredient in any recipe. Big virtual hug and happy cooking. ❤️🍜🤗

    I found ham ends and pieces on sale this week. 3 lb was 4.99. If we had a meat slicer, we could eat it as lunch meat. We chopped it and will either use it in ham and bean soup or ham salad. My ham and bean soup came out to 4 bucks for a giant pot of soup. (It also had celery, carrots, and onion). All because I found that great deal on ham. Don't let different ingredients or forms of an ingredient deter you from trying something new or having to think outside the box.

      When spiral sliced hams go on sale around the holidays, I stock up too. I'll break them down into different cuts and vacuum seal into meal size portions(including the ham bone for beans). I do the same for turkeys also. When thawed I'll remove the breast plate to brine and cook the rest in a stock pot with vegys and seasoning. When done I'll shred the meat and strain the stock. After cooled I'll vacuum seal again. The following day I'll roast the breast plate and remove the breast after completely cooled and seal individually for meals. We just had a turkey breast this week. Other than thawing stock and the breast, the meal took about 15 mins to make. I slice the breast and warm up in some stock, use rest of stock in stuffing and/or gravy.

    Aldi has been helping so much in my area. I live in Massachusetts where cost of living is high to begin with. Everywhere near me a family pack of chicken is $18.00 and Aldi is $10.00-$11.00. I started shopping there more because of you.

      After becoming widowed, I've been trying to downsize my cooking. Difficult for just one person. So, I make a batch of soup, stew, etc., portion out a meal or two into dishes and pressure can (75 minutes at 10# pressure) those protein meals in pints for future meals. If there's extra room in the canner, I finish the load out with some kind of beans.( Put 1/3 c dry beans in bottom of pint canning jar and fill to neck with water.)

      So true! Cabbage and spinach were my go to's for cooking for one because of how versatile they are, it can be consumed raw or fresh.

    I bet, for those of us with gluten issues that you could sub potatoes for the gnocchi and be fine. At least that’s what I’m going to try!

    This is what I've been looking for :D more extreme budget meals where there is a breakdown, preferably around a dollar or less per serving . I feel like these meals are much easier to do/make & are more creative compared to trying those $5 a week challenges. Much more relatable.

    Making homemade gnocchi is so cheap and really stretches the dollar. It can be a pain though but worth trying out. Since prices are going up, these videos are highly needed! Ty.

    I love a ramen noodle upgrade! my favorite way to spice up ramen is to add frozen veggies, a spoonful of peanut butter and a splash of lime juice. I love peanut sauce so this usually a comfort meal for me!

    Yes, see mindy mom, i love notched up ramen noodles, yes very cheap one pot meal,at least the way i make it,i only use one dish. Love the inspiration! The dish you made with fettucine noodles, thin spaghetti noodles can be a substitute. Break thin spaghetti into 1inch segments, only takes a few full length noodles for this then toast them in your preferred cooking oil or butter. Works out very well!

    I have been making the ramen dish for years. It's a family favorite. We also do the same thing with leftover rice and make easy fried rice and add any leftover meat from the week.

    growing up my mom did her best on a very tight budget and we used to have Ramen brought to a boil and an egg dropped in as it is boiling and.mix it fast kind of like and egg drop Ramen so yummy cheap and has carbs and protein.

    Variations of all these recipes already exist in our house, definitely enjoyed seeing your variations though!👍 Quick ramen upgrade recipe: 1 brick ramen (chicken, mushroom, pork, oriental & soy flavors are best for this), mix in ramen flavor packet, 2 cups water (or to taste preferences) for broth, add 1-2 tablespoon crunchy peanut butter and sriracha (or red pepper flakes… or both) to taste. Enjoy as is or add leftover chicken. Almost instant spicy Tai peanut soup! Makes 2+ cups.

    These are great recipes for right now with food being more expensive and food shelves not like they used to be and probably going to get a little worse. It's amazing what you can do with a few odds and ends and an imagination. I've found I can really make a lot of soups with few ingredients that still tastes great. Sometimes my idea doesn't taste as good as I would like but usually it is pretty good, it's really all in the seasonings.

    Just made the Fideo con Carne y Papa and it was AMAZING! I have made Fideo forever but never with meat and potatoes. Usually a very meatless lunch for my kids. I will make this again and again. My kids and husband LOVED it. So did I. And I have left overs. Thank you for always finding cheap and easy ways to feed our families. Love your channel. Thank you!

    I'd be really interested to see a video to see if a meal from Dollar Tree is worth it anymore considering the price hike. Five items from Dollar Tree now is 6.25 and even comparing that meal from Dollar Tree to the cost of the same meal at Walmart I think would be really interesting. or even a video comparing the price of eating from Dollar Tree for a WEEK versus at Walmart

      @@SeeMindyMom I have a really simple gnocchi recipe. It calls for 2 shallots, sliced fresh mushrooms, fresh sage and chicken or vegetable stock. You saute the shallots and mushrooms, and the stock and let it simmer and reduce a bit. Then add the fresh sage and the gnocchi (you cook the gnocchi separately) top with fresh parmesan. I love this because it's so easy to make and easy to change up. 🌻

    Giving it a go! I found 7oz pkgs of fideo and the beef I had already cooked up in the freezer was more like 3/4 pound. I just added a little more tomato sauce and and extra 1/2C water and we’re about ready to eat 😃

    I am really trying to do home meals for budget reasons (health is a bonus) and truly, you are so inspiring! I'm such a by-the-rules person at times, and cooking is not something I'm good at, so seeing how you can tweak and adjust things really opens my world up! Thank you!!
    Can you go over beans ... textures, flavors, uses ... in the future? I really only know pinto and kidney ... and hate lima.

      Black beans and lentils have nice meaty textures and are often used as meat substitutes and can be really friendly to your budget. If you don't want to go fully meatless you can play with the ratios. For example you can make a spaghetti Bolognese with a 50/50 ratio of ground meat and lentils in your sauce. Black beans can be added to your taco meat to reduce your ground beef amount and stretch the meal further, etc.

      I use lentils or field peas in my chili or spaghetti sauces because they're smaller and like Yvonne Palmquist, said they're meaty in texture so you can cut back on the total meat and no one is the wiser ;)

    In San Antonio you can find Fidel loco on the menu at a lot of restaurants. You can either get it with beef, carne guisada or pinto beans. It is also yummy with cilantro, carrots and a squeeze of lime. Both my boys ate this as toddlers and love it with meat now as they are older.

    We do stir fry ramen all the time! It’s a great way to use up veggies in the fridge or freezer veg.

    You pronounced mire poix perfectly, no worries there.
    If you want to keep your knives sharpened longer, don't use the blade to scrape the food off the cutting board.

    Oh my gosh, love all the recipes and plan to try the gnocchi and Fideo soon. I make a potato broccoli soup that’s quite similar, but adding the gnocchi sounds really good. It will be first time for the fideo. I’ve made ramen with added veggies and egg for years, but your sauce takes it to a new level. Thank you for all your inspiration!

    I just found your channel. Have really been enjoying it. You definitely need an instant pot! So many things would be so much easier and so much better tasting in an instant pot. Normal spaghetti is 10 times better in an instant pot. You should get one. Thanks for sharing everything with us.

    After learning how to coupon- I will never pay for shaving cream, razors, deodorant, soaps, tampons and pads again. I will splurge on shampoo and conditioner though and just donate or gift the hair products and body wash I get for free since I can't really use them because I'm allergic to harsh dyes and fragrances.

    Fideo looks amazing! I've been doing the ramen upgrades with Thai rice noodle soups (gluten free). Super tasty, I just add spinach, and some cooked black eye peas, yummy quick meal for one. Would love to see more meals for one. 😊

    I am going to have to try the fideo but I have to use green onion instead (hubby won't eat any other kind of onion). I would also use some Jimmy Dean mixed in with the burger. That will have to be next month because we are in a low spend month and I have all I need now. The fideo is all I need and Feb. is going to be another low spend month. Thank you for the video.

    Finding ramen has been impossible. It's mostly out of stock, for months. Maybe they are all sitting on a cargo ship out in LA. It's nuts.

    I want to say meer-uh-pwah . I took French and was pretty good at pronunciation. It's been a couple decades since I was in school. We didn't have online friends quite like we do now so I had more practice.

    I never knew fideo was a recipe or meal. We just call all pasta noodles fideo in our house. 😅 Also whenever I make any rice or pasta or soup dish I always brown it first to cut down on cooking times. Thanks for your videos. They're always very helpful to my budget!!! ❤️

    Fideos in my country is just your standard noodle and then we categorize them depending on their shape

    It's funny how in most other languages the adjectives come after the noun...instead of blue shirt it's "shirt blue." Language is very odd and most all derive from Latin which is a bizarre language in itself haha. The language that makes the most sense is sign language.

    You always give me the best ideas. I've never cooked or eaten gnocchi. One of my daughter's is a vegan and sometimes I have no idea what to make her (she cooks for herself ) - thanks for the link, I'll go check it out. Hagd.

    The only soup I really like is potato soup so the gnocchi soup idea looks great as I also love broccoli. Iust get out from under my rock as I never heard of the vermicelli dish but it sounds good. It is great how you show building some basic seasonings cab really add a lot of flavor to basic ingredients. Walmart and dollar Tree have dried seasonings for $1 so buying a couple a month can build a spice cabinet net quickly! Thanks Mindy!

    Hey Mindy! I have never heard of that one dish you made. It looked really good though. I'll have to see if I can find some vermicelli to make it. Updated ramen is one of my favorite things. I make a sauce with soy sauce, hot mustard, and peanut butter powder. It is so good with ramen and broccoli. Oh I also add a splash of crystal hot sauce. Hope you have a great day!

    My two men are not fans of soups/stews and I'm having problems with trying budget meals. So irritating to me. Tyvm for your budget meals videos though. Love your ideas.

      Hungarian goulashes, casseroles, and meatloaves might work.
      You can even make them meatless.
      My hamburger meatloaf is about equal parts hamburger and uncooked old fashioned oats with tomato paste, water and Italian seasonings. You could use other meats such as sausage. Not using eggs or milk makes it more economical. The oatmeal once mixed with the hamburger and water is the binder.
      You could also put chopped up veggies in it if desired, mushrooms, carrots, potatoes, etc.
      Eggplant casseroles with tomato paste and swiss cheese are great too.
      Keeping the dishes simpler with just a few ingredients makes it more economical and lets the flavors of the few ingredients used to come through.

      Make pasta and rice dishes with diced or ground meat (so that you can use less) rather than having individual servings of meat.

      Try hamburger helper meals and stroganoff. I make mine homemade.

      My family is irritating too. They only wanted the scratch pizza. Ugh. They are getting chicken and dumplings today, because I have a whole fryer from fajitas to use up. They might be unhappy again 🤣 My budget went from $325 week to $150. They better get accustomed to this, because I’m saving for retirement.

    Hey!!! I’ve spent the last couple weeks binge watching your videos. Love all of your ideas, but wonder if you could help a stressed out mama out. Between my kids’ activities we are out of the house several nights a week and fast food/concession stand dinners are killing our budget. Can you do a “budget meals for on the go” video. We can’t really eat before or activities because it would be too early or too late. We need portable!

      Mind over Munch has a great article on what does and doesn't freeze well for make-ahead-freezer sandwiches. Bananas, apples and grapes are very portable, as well as carrots, celery, and broccoli. You could split your meals on the early/late thought process, too - with a hearty snack prior to the event and crockpot meal ready when you walk in the door after the event. Two smaller meals are okay, it doesn't have to be one meal (dinner) per se.

      Spelling is correct. Check your ethnic aisle. Although my store has been out of it for months.
