Thank the Heavens that I ran across your channel!!! We tried this, I used the cornbread stuffing, as you suggested, and the entire casserole was eaten with no leftovers. I don't usually ever make recipes that I find on UA-cam. Normally, I use info for inspiration, but I made the poor man's chicken casserole, Monday night. I doubled the recipe because everyone takes leftovers for lunch. It made a huge dish of it, and we all loved it so much that I didn't have enough leftovers for all of us the next day 😅 I used gluten free boxed stuffing, but otherwise did it exactly the same. It was delicious! Made me do a happy dance at the table! And I'm a long time trained chef, but as a Gen Xers, it reminded me of my husband's family dressing, but even better! I can guarantee you I'll be making it for a Thanksgiving side dish, as well as just a quick dinner when needed. Thanks so much, Brooke! ❤
I saw the basic recipe for this chicken casserole in a video you did maybe a couple years ago. I now make it on a regular basis. I add mixed veggies and mushrooms but I don't add milk and when I do add butter it's only about a quarter of a stick. We think it's a little too soupy with the extra liquid. But omg it's so good!! My husband loves it.
I made this tonight for my husband and I, I added french fried onions on the top because I had some, so why not. IT IS SOOOOO GOOD! Holy Moly! Thank you for this.
My entire life.I stretch the box of stuffing by adding two slices of dry toast. It makes more and you cannot tell the difference. Try it. Just Dice it up small and add to your stuffing easy peasy.
Great minds think alike. I made stuffing this morning for my son and daughter-in-law who have a new baby. I bought a $1 loaf of french bread from Walmart. Let it dry out over night. A little sauted onion and celery, a couple boullion cubes, 1 egg, sage and a can of cream of mushroom. I am buying them a rotisserie chicken to go with it and a jar of home canned green beans. They will get a ton of meals from that.

I make something very similar, but in a reverse order! A few chicken breasts or canned chicken in the bottom, cream of mushroom or cream of chicken on top of that, and then a box of stuffing mix with butter on top. Gets you a little bit of crunch on the top. Love your vids, keep doing what you’re doing!
Seeing that turkey stuffing reminds me of my mom’s Turkey roll ups. Make your stuffing to box directions. Take deli Turkey and put a couple spoonfuls in the center and roll up. Pour a jar of your choice of jar gravy over it. We use Turkey or chicken. Bake in oven about 30 minutes. It is so delicious!
I made the roll ups for dinner, my son came over & he loved them & said the grands would also. SO, I sent some home with him for my grandbabies. Welp, he ate them ALL on the way home! Didnt save even one for them. It's now a staple for us all. BOYS, ugh! LOL!
Thanks for sharing. I lost my income in January, but been taking my savings to live on. Now it's almost gone. Living by the grace of God now! But my pantry is well stocked because I am a hoarder and stocking up on sales. But got to save as much as possible. Feed 4 people, but my 2 older grandson stops by often just to eat! I actually made pancakes and sausage yesterday for dinner but had no milk, so used just water and it came out wonderful!😅😅
Ingles has chicken thighs for $1.38 lb. They can be deboned fairly easily and would be a good thing to show on a video! Not a steal of a price, but good enough to get a couple trays and freeze some to eat until a lower price comes back around.
Wow, your Walmart is a lot cheaper than mine. Our carrots are $1.30, chicken $1.50 and all the cream Soups, even the store brand are never below $1.19. When you do your cream soups use a spatula to get all the contents. I've found there is usually several tablespoons of product in the bottom & sides of the can. Love your stories of your family..
Brooke, I take carrots any old way & boil them with a can of ginger ale - when the liquid is gone, they are done. My family absolutely loves them that way. Thought I would share since you have blessed me with so many good ideas- perhaps Kylen might at least try 1 piece that way? I woulf welcome his opinion on them.

If you had 1 small chicken breast you could boil in water, then shred & use the broth instead of water, & a can of cream of chicken to help add more chicken flavor

A JAR of chicken bouillon, a 1/2 dozen eggs, a pound of rice, and a 12 oz. of California mix veggies at my Walmart is $5.69. Fried rice, plus left over rice and a JAR of chicken bouillon. Don't need the bouillon? Dinner for only $3 plus change. Canned chicken instead of eggs... that fits the budget, too. A few simple meals throughout the week can really reflect in reducing your grocery budget.

This will be a remake and for the bonus I had Crandberry sauce in panty also. I am also bagging ingredients to put in our blessing boxes here. I'm going to make chicken casserole like this from now on. I've got a recipe that's easy but this one is even easier than mine. I've already got everything but the canned chicken and stuffing mix. At the holidays or big family get togethers mom would make glazed carrots with butter, brown sugar and vanilla in a skillet. Bring it almost to a boil and pour in sliced carrots (she used a home canned pint jar). Stir it all up until all the carrots were coated. Remove from heat and serve warm.
I keep some staples in my pantry at all times ... Different dried beans .. Rice ..Potato flakes .Powdered milk . pasta , canned meats , powdered eggs .. Canned veg ... all shelf stable and all pretty cheap.. I prefer fresh or frozen veg . but to have some canned and shelf stable is good on the mind ... I so recommend in these times when we have no clue what's next ,its just good to know you wont starve ..
Aren't barebone meals the best?! About 23 years ago I was a single, teenage mom. All I had was stuffing mix, 1 can of green beans, 1 can of corn, a gravy packet and 1/2 a chk breast. I threw it all together and it was amazing. It's still my daughter's favorite minus the chicken since she's now vegetarian, but nonetheless, I still make it!
I started making this to use leftover Thanksgiving dinner. That was about 50 years ago. Everyone loved it so much we started making it with chicken at least once every few months. Only difference is we add broccoli and put the stuffing on top. Still make it today great job and it feeds a lot and very filling.😊

Brook, your guys are the sweetest, and the dinner looks delicious! Last Thanksgiving I got several bunches of celery on a crazy sale, and tried chopping and freezing them for stews and meals. It's been such a convenience to just shake some out of the bag when I need it. ( I froze it in a thin layer on a cookie sheet first.) I'm so bad at letting celery spoil in fridge, but this solved that problem. I'm planning on doing onions too. They go bad on me as well, when life gets busy. I hope this helps someone with the same problem. I love your channel Brook, and how you are so authentic! It makes me feel right at home.❤
I love to use homemade drop biscuits to cover a baking dish full of chicken stew. My favorite chicken pot pie. It really stretches the chicken stew, and isn't expensive.

I think I have a good way for your youngest to try a cooked carrot and maybe like. Try adding a little brown sugar to the carrots before cooking or pancake syrup or honey. I had a child that was refusing to eat carrots. She always said she hated them. I added brown sugar she still had a problem. So, I tried pancake syrup and BINGO, she liked them. I love you channel. I love everything about it. You grew up like. Mother raised 5 of us and she was the only working. Tough lady. Loved her to death. Keep up the great work. May God bless you and keep you in his arms
@deborahatkins5347 - I used to add cinnamon or pumpkin pie spice and act like it was dessert. You won't need a lot of extra sweetener and if you mash it up it won't look like carrots.
my dad made a stuffing using semi mashed potatoes (partly mashed, partly chunks), slices of white bread lightly toasted in the oven. He would soften celery and onions in a frying pan and mix everything together with enough chicken broth to make it moist but not watery. He then added poultry seasoning, mixing that in really well. Then he would smooth the top and sprinkle more poultry seasoning on top, cover with saran or foil and put it in the fridge overnight. That's what he used to stuff our turkey with at Thanksgiving and Christmas. When I grew up and was living on my own with my son, I had Thanksgiving at my house the first year I lived there and made my dad's stuffing. It came out really good being the first time I ever made it. I've use it as a base for my cornbread sausage stuffing that I make for my son when he comes for the holidays. I make my dad's stuffing for myself since I don't eat sausage since it tends to upset my digestive tract

My mom would make something similar. Cooked chicken with cream of chicken soup and sour cream poured over the chicken and then make the stuffing and put it on top cover and bake. So many good memories.
I make this diff. Top it with the stuffing mix so its kinda crunchy! I use canned veg all usually and mix into chicken and soup mixture and i never add the butter..youll never miss it!! Cheap and tasty!!! Hugs

stuffing is different than dressing. it really is. Dressing is what some people call "cornbread casserole" i think. but when you add chicken or turkey and its broth, and onion,, celery, (i used boiled eggs) sage, along with cornbread (and i use a can of cream of chicken soup (which we didnt always do in my family, but now i always do) that is dressing. stuffing is often made with toast or bread or crutons and some people add apples, etc to it. originally, stuffing was to go inside the turkey. Dressing is a seperate dish. in my family, dressing s the most important part of the meal for thanksgiving and Christmas..... and the stuffing mix is mostly for the stuffing, its not dressing lol. thanks for all your ideas, Im all old and stuff but always learn from you!!!

The Albertsons here has raw chicken in the butcher's case for around $1.50/lb regularly, so you can get however much you want to make a meal.

Last Thanksgiving I got several bunches of celery on a crazy sale, and tried chopping and freezing them for stews and meals. It's been such a convenience to just shake some out of the bag when I need it. ( I froze it in a thin layer on a cookie sheet first.) I'm so bad at letting celery spoil in fridge, but this solved that problem. I'm planning on doing onions too. They go bad on me as well, when life gets busy. I hope this helps someone with the same problem.

I think I have a good way for your youngest to try a cooked carrot and maybe like. Try adding a little brown sugar to the carrots before cooking or pancake syrup or honey. I had a child that was refusing to eat carrots. She always said she hated them. I added brown sugar she still had a problem. So, I tried pancake syrup and BINGO, she liked them.

Also try some cinnamon or pumpkin pie spice. Doesn't take much sweetener and I presented it like a dessert to the kiddos.
@deborahatkins5347 - I used to add cinnamon or pumpkin pie spice and act like it was dessert. You won't need a lot of extra sweetener and if you mash it up it won't look like carrots.

my dad made a stuffing using semi mashed potatoes (partly mashed, partly chunks), slices of white bread lightly toasted in the oven. He would soften celery and onions in a frying pan and mix everything together with enough chicken broth to make it moist but not watery. He then added poultry seasoning, mixing that in really well. Then he would smooth the top and sprinkle more poultry seasoning on top, cover with saran or foil and put it in the fridge overnight. That's what he used to stuff our turkey with at Thanksgiving and Christmas. When I grew up and was living on my own with my son, I had Thanksgiving at my house the first year I lived there and made my dad's stuffing. It came out really good being the first time I ever made it. I've use it as a base for my cornbread sausage stuffing that I make for my son when he comes for the holidays. I make my dad's stuffing for myself since I don't eat sausage since it tends to upset my digestive tract

My mom would make something similar. Cooked chicken with cream of chicken soup and sour cream poured over the chicken and then make the stuffing and put it on top cover and bake. So many good memories.
Now I know what I can do with leftover cornbread
I make this diff. Top it with the stuffing mix so its kinda crunchy! I use canned veg all usually and mix into chicken and soup mixture and i never add the butter..youll never miss it!! Cheap and tasty!!! Hugs

I've been waiting for you to share this one again!!! I customize it for me and mine with cream of chicken and a little sour cream. I've even added egg noodles before. It's delicious! stuffing is different than dressing. it really is. Dressing is what some people call "cornbread casserole" i think. but when you add chicken or turkey and its broth, and onion,, celery, (i used boiled eggs) sage, along with cornbread (and i use a can of cream of chicken soup (which we didnt always do in my family, but now i always do) that is dressing. stuffing is often made with toast or bread or crutons and some people add apples, etc to it. originally, stuffing was to go inside the turkey. Dressing is a seperate dish. in my family, dressing s the most important part of the meal for thanksgiving and Christmas..... and the stuffing mix is mostly for the stuffing, its not dressing lol. thanks for all your ideas, Im all old and stuff but always learn from you!!!

My middle son doesn't like most cooked veggies. When he was younger, if I made carrots or pretty much any veg, I would give him raw carrots and dip.
