    A saffron bun or Cornish tea treat bun is a rich, sweet, yeast-leavened bun, which is bright yellow from the added saffron and contains dried fruit such as currants and raisins. The main ingredients are flour, butter, yeast, and caster sugar. Saffron buns contain dried fruit like currants, raisins, mixed peel and sultanas, similar to tea cakes. There are similar buns created across Scandinavia such as the lussekatt or lussebulle, which is traditionally eaten during Advent.
    Ingredients:
    21 g / 1 ¼ tbsp fresh yeast (or 7 g instant dry yeast)
    50 g / ¼ cup sugar
    400 g / 3 ½ cups strong white bread flour
    175 ml / ¾ cup milk
    A pinch of saffron (0.1 g)
    40 g / 3 tablespoons butter
    2 eggs
    ⅓ teaspoon salt
    80 g / ½ cup dried cranberries, currants or raisins
