Thank you so much for the video. I made this for Christmas dinner today with andouille sausage from Bourgeois Meat market in Thibodeau, LA. It was a runaway hit. Everybody loved it!!!!
Glad y’all enjoyed the recipe! Thanks for the feedback!
So agree with you about using stock. Definitely gives a lot more flavor. Chicken stock is good, but I take it a little extra and use my own home made stock. I keep a gallon bag in my freezer I call the "bone bag" and collect all bones, chicken backs, vegetable trimmings, veg I didn't end up getting to and is 'cook today or pitch'. When I've collected 2-3 bags, I pop it on the stove in a huge pot (my canner, actually), cover with water, add a splash of apple cider vinegar to help draw out the vitamins from the veg, and put it as low as I can and simmer for 24 hours. I do have to turn the stove off for awhile throughout the process because I don't want it to be a rolling boil, just a barely simmering. Strain through a mesh strainer, then again through a cheese cloth or old flour sack towel, divide up quantities I like, and pop it in the freezer. It's really bone broth and as long as you keep the heat nice and low, you'll notice it gets jelly like when cold. That's all that wonderful, healthy collagen. Have you noticed how much bone broth in the grocery store costs? I can make well over a gallon simply from stuff I'd have otherwise thrown away. And it makes amaaaazing red beans and rice!
Also, this recipe freezes very well. I just make a mess of it and throw it in the freezer. Then when I have a cookout just toss it in the crockpot to reheat. A real time saver. Nice video.
I am from Ontario Canada and thanks to my high miler trucking job, I love red beans and rice, just like you're eating.
You can think what you want but that old video is how I've been doing it for years and everyone loves it
BENJI me too! But I can adjust
I love when the beans turn into a gravy consistency. Good job!
I travel from Scotland to Louisiana for work, and let me tell you, it isn't a proper trip unless I've had some red beans and rice from Victor's in New Iberia! Now I'll definitely be spreading the red beans and rice love to my friends and family back home. I just need to find a crawfish supplier and my prayers will have been answered. :D
I've never had this dish. It looks amazing. This is another must make from Smokey Ribs. Thank you Rus.
This is precisely why I subscribed.
I still remember having this in daycare back in Mississippi.
Daycare!?
I just followed your recipe to a delicious conclusion! Thanks for sharing your talents with the internet.
Boy the music in the old version was awesome! Love red beans and rice! Nice recipe.
I love you and your channel . Thanks for this American attitude for cooking, cheers from Europe
Awesome! You just helped me and the wife decide our new years dinner! I was stationed at Keesler AFB for years and my daughter still lives in Gulfport...Great job sir!
Great reload! Your attention to detail in all your videos is second to none.
I like that. “It’s smelling good in the hood”💪😎
Oh man, you are bringing back some memories. East Dr days.
I have been subscribed to you for years man. Excellent recipes presented straight forward. I think you going back and revisiting your early recipies is a GREAT idea. Looking forward to more content from you in the future. Cheers!
Man, those beans look outstanding. Great video.
I've actually been wanting to do some red beans and rice myself. Now after watching your video, I need to. Great job that looks very good.
Russ, wow that looks awesome! Same recipe and same way I cook red beans and rice. I know that was one fine meal! Great video and anyone who has never cooked red beans and rice before will be able to cook them perfectly if they follow your perfect instructions! Well done!
Always love red beans and rice. Great idea doing a re-load. Initial videos always get drowned out and forgotten. Your recipe and cook is delicious, and thanks for sharing again, sir. Best to you and yours this new year from my wife and I over here at The Hacienda in Missouri.
What a difference time and technology make. Great looking beans and rice!!
I loved the red beans and rice at Bufa's Bar. They were the best I had in New Orleans and I had every day! Thanks Rusty, I'm going to try this recipe tomorrow.
That looks delicious! 🥘🥖
I'll have mine with some Buttered Cornbread and Mayo based Cole Slaw. 😋😋Good.
Thanks for sharing.
👍🌞👍
I made this for my family and they ate the entire pot! The flavor is amazing! I added just a little extra seasoning, cause we like it, but otherwise followed your recipe. Thanks so much for this wonderful redo!
Glad you and your family enjoyed it!
That 'grey' color of your beans comes from the cast iron pot...no need to worry about that color! IF you want, cook a bunch more bacon in that pot to give it a good seasoning (to seal the cast iron pores), and it'll be more of a traditional red color. Don't matter - bet it tastes amazing!
Ohhh I love red beans and rice. It’s so good. Sometimes I add a bit of cilantro as well.
Can’t believe 6 years have passed by since then Rus. Time flies. Looks delicious.
I a'm very fond of all beans and this is one of the finest dishes I know of next to chili . I think its a good day to make some Red Beans and Rice.
Happy New Year Y'all.
Red Beans and rice is one of my favorites! great re-do video Russ!
....There are so many dishes that I can now make vs buy after watching your videos... This is one of them... Now, I have to go with vegetable broth and smoked turkey but this dish I cannot wait to make and feast on... 👍👍👍
Thanks for this video. I was never really tempted by this dish until I watched you make it. Now, I want to try!
Boy that dish looks appealing to me. Thanks for the recipe Russ. Stay safe brother.
Love the original music Rus.....and this reload! This actually is so simple but extremely delicious! Great reload!
Great video and description on the importance of certain ingredients and cooking tips. Since I'm in northern california I'm not familiar with the details of red beans and rice but I do know what I'm cooking this weekend!. For tonight, I'm gonna sit back and watch your saints on Monday night football! Thanks for the video
Great concept for a video! Nice plating. You're a good cook and I appreciate you sharing the recipes.
Okay, 2.5 hours later my Red Beans are finally done. Being Greek, I normally prefer cooking different types of dishes, spices and seasonings, but these turned out very well and are quite tasty. Kudos to you and your recipe sir! I'll add them to my repertoire of dishes.
Glad you enjoyed them!
WOW RUS THAT LOOKS AMAZING !
I am making this now. After watching a slew of videos on this recipe, I chose your's.
It’s the real deal. Enjoy!

Great video as always! Thanks for the remake, Rus!
Definitely gonna try this!
Great looking Beans and Rice. Love how you showed the original video along the way too :)
This was just insanely glorious to watch.
Fine looking pot of red beans you got there Rus. I like mine to have a thick gravy too brother!! It doesn't get much better than that for a "stick to your ribs" kinda meal!! Cheers brother and Merry Christmas!
Thanks Troy, and Merry Christmas to you as well! Cheers brother!
Nice! Russ I love red beans and rice this will be tried up here in Kansas City. Thanks for sharing again. I can remember some of your first video's and I'm still with ya man.

So much flavors going in. I'm drolling right now !!!!!!
Awesome presentation!! Thanks for sharing.
So I drank a half bottle of CC whiskey and I finally made the rice at 8:15 PM and loaded it up with Siracha hot sauce. We both like eating fire! Even my GF who didn't want the sausage in it raved about it. Winner, winner chicken dinner! This recipe was worth the effort. We'll have it again for breakfast tomorrow morning.
Monday lunch staple for years
DELICIOUS
I've had something similar but never had this exact recipe. I could sit down and eat a heapin helpin of that. Not much curb appeal as you said, but sooo good. That bread looks delicious too. Very excited about you doing these RELOAD VIDEOS. YUM

You certainly made that dish look appetizing on the plate. Thanks for doing a remake video on this great dish. I like how you changed the way you added the ingredients to get maximum flavors from each one. Hope you have a good week. Wishing you and your family a Merry Christmas!

Looks like an easy simple recipe so I'll try it.
Fantastic job! Thank you for the whole thing. 👍
I remember, years ago, hearing that you did "some stuff on youtube". I never heard anything else about it. Discovering your channel, now, and seeing how successful it has been is awesome. I am always telling my family (here in Taiwan) about the great "home style" food we have back home. Thanks to your channel, I can at least attempt to recreate some of it and introduce it to them. I really appreciate the work you put into these videos. Merry Christmas and Happy New Year!
Yeah, been doing this for almost 6.5 years now and my how time flies! Glad you found the channel, and like the videos Skyler! Good hearing from you. Got to see your dad earlier this month. Him and Marlene made a trip down here for my birthday. Kinda blew me away! It was great seeing them again. Merry Christmas and a Happy New Year to you and yours!
My favorite youtuber and has been for years, but more importantly a truly nice man! Merry Christmas to you and your family Rus!!

Love red beans and rice and your recipe is pretty similar to what I do as well. Good video and thanks for sharing.
Great video! I love the contrast and compare to the original. I especially like "how I do it now" points. And it's your delivery and personality, I could watch you make a peanut butter sandwich.
Now that’s real Nawlins Red beans and rice right there! There’s nothing like em and once you’ve had them you want more. Excellent video and perfect reload. Merry Christmas!

Russ
Just made this for dinner using your techniques. I had to make a substitution of the ham hock and used 2 smoked pork chops. They are a little less greasy but this recipe is the bomb. Only thing missing for me was I had no Parrain's. Wife bought some using your link. Thanks for sharing a great recipe.
I can’t wait to try this recipe. I like them thick and creamy also
Good idea on doing a "re-mastered" version! I like my beans in chili to have some bite to them but you're totally right about RB&B - you gotta cook em til they surrender. And thanks for sporting the Saints colors! I tend to be a little bit of a homer with the local teams - I am actually deep down a Sharks hockey nut with season tix since the very beginning, ending when I deteriorated from ALS so much I could no longer attend games - but I always liked the Saints from my years in Florida in the 70s. Then when Steve Gleason became my friend I really took them to my heart. I still remember his block of the Falcons punt after Katrina and how the Dome blew its new roof off again, but in a good way. He totally deserves his larger-than-life statue outside the Dome.
"Who dat?!?"
Who Dat for life!
You are right, Katrina victim here on the Mississippi gulf coast. I will never forget that game. My dad used to take me and my brother to the games before the Super dome in Tulane stadium. Tickets were 7 bucks for adults and kids under 12 were 2 bucks in the end zone. WOW, how times have changed !!
Looks good!
