So agree with you about using stock. Definitely gives a lot more flavor. Chicken stock is good, but I take it a little extra and use my own home made stock. I keep a gallon bag in my freezer I call the "bone bag" and collect all bones, chicken backs, vegetable trimmings, veg I didn't end up getting to and is 'cook today or pitch'. When I've collected 2-3 bags, I pop it on the stove in a huge pot (my canner, actually), cover with water, add a splash of apple cider vinegar to help draw out the vitamins from the veg, and put it as low as I can and simmer for 24 hours. I do have to turn the stove off for awhile throughout the process because I don't want it to be a rolling boil, just a barely simmering. Strain through a mesh strainer, then again through a cheese cloth or old flour sack towel, divide up quantities I like, and pop it in the freezer. It's really bone broth and as long as you keep the heat nice and low, you'll notice it gets jelly like when cold. That's all that wonderful, healthy collagen. Have you noticed how much bone broth in the grocery store costs? I can make well over a gallon simply from stuff I'd have otherwise thrown away. And it makes amaaaazing red beans and rice!
Also, this recipe freezes very well. I just make a mess of it and throw it in the freezer. Then when I have a cookout just toss it in the crockpot to reheat. A real time saver. Nice video.

Now I'll definitely be spreading the red beans and rice love to my friends and family back home. I just need to find a crawfish supplier and my prayers will have been answered. :D
Okay, 2.5 hours later my Red Beans are finally done. Being Greek, I normally prefer cooking different types of dishes, spices and seasonings, but these turned out very well and are quite tasty. Kudos to you and your recipe sir! I'll add them to my repertoire of dishes.
That 'grey' color of your beans comes from the cast iron pot...no need to worry about that color! IF you want, cook a bunch more bacon in that pot to give it a good seasoning (to seal the cast iron pores), and it'll be more of a traditional red color. Don't matter - bet it tastes amazing!

Good idea on doing a "re-mastered" version! I like my beans in chili to have some bite to them but you're totally right about RB&B - you gotta cook em til they surrender. And thanks for sporting the Saints colors! I tend to be a little bit of a homer with the local teams - I am actually deep down a Sharks hockey nut with season tix since the very beginning, ending when I deteriorated from ALS so much I could no longer attend games - but I always liked the Saints from my years in Florida in the 70s. Then when Steve Gleason became my friend I really took them to my heart. I still remember his block of the Falcons punt after Katrina and how the Dome blew its new roof off again, but in a good way. He totally deserves his larger-than-life statue outside the Dome. "Who dat?!?"
You are right, Katrina victim here on the Mississippi gulf coast. I will never forget that game. My dad used to take me and my brother to the games before the Super dome in Tulane stadium. Tickets were 7 bucks for adults and kids under 12 were 2 bucks in the end zone. WOW, how times have changed !!

I was turned on to them two days ago and have been scouring UA-cam for any videos on to make an authentic version. I have seen every way to cook this Louisiana treat and was amazed at how haphazard some cooks presentations were. It was very discouraging. Russ Just made this for dinner using your techniques. I had to make a substitution of the ham hock and used 2 smoked pork chops. They are a little less greasy but this recipe is the bomb. Only thing missing for me was I had no Parrain's. Wife bought some using your link. Thanks for sharing a great recipe.

So I drank a half bottle of CC whiskey and I finally made the rice at 8:15 PM and loaded it up with Siracha hot sauce. We both like eating fire! Even my GF who didn't want the sausage in it raved about it. Winner, winner chicken dinner! This recipe was worth the effort. We'll have it again for breakfast tomorrow morning.

Excellent video, I do it all pretty much the same but I add about half a stick of butter at the end. Sounds crazy, but makes them very creamy and adds more richness (as if a pot of simmered pork actually needs it).
I love your channel but I have one thing that you could do to make it slightly better and that is to please add the ingredients at the bottom seeing as I'm at the grocery store but I find myself having to watch the whole video before I have the products
I usually post a printable recipe on my website by request, and this recipe will be going on there since I've already had a number of request. I use to post the entire recipes in the "show more" section in the early years of my channel, but after starting a website, I created a recipe section for all request. It will be a day or two before I have time to add it to the site, but once it's up you will be able to print it out and file it with your other recipes. Sorry for the wait.

Also thanks to you I got the nerve to make blue crab for the first time and I have to say their meat is really tasty and a lot more in there than I initially thought. If you can please help me find a easier way to clean them though sometimes I boil them and whatever they were eating sometimes comes out of their mouth and I think it's kind of nasty
Your welcome and glad you enjoyed it. I recently done a boiled vs steamed crab video and show a little on eating one but not much. All I ever eat is the white crab meat in the body and the claw meat. If your eating anything besides that then that is what you are tasting perhaps. I always remove the top shell. I rip off it's mouth and eyes, then the apron on the back, then break it in half. You should be able to pull away shell to get access into the channels of meat from this point. There are videos on UA-cam showing just how to do it. Maybe I will do that one day as well. Excellent video, I do it all pretty much the same but I add about half a stick of butter at the end. Sounds crazy, but makes them very creamy and adds more richness (as if a pot of simmered pork actually needs it).

I love your channel but I have one thing that you could do to make it slightly better and that is to please add the ingredients at the bottom seeing as I'm at the grocery store but I find myself having to watch the whole video before I have the products

I usually post a printable recipe on my website by request, and this recipe will be going on there since I've already had a number of request. I use to post the entire recipes in the "show more" section in the early years of my channel, but after starting a website, I created a recipe section for all request. It will be a day or two before I have time to add it to the site, but once it's up you will be able to print it out and file it with your other recipes. Sorry for the wait.

Also thanks to you I got the nerve to make blue crab for the first time and I have to say their meat is really tasty and a lot more in there than I initially thought. If you can please help me find a easier way to clean them though sometimes I boil them and whatever they were eating sometimes comes out of their mouth and I think it's kind of nasty

Your welcome and glad you enjoyed it. I recently done a boiled vs steamed crab video and show a little on eating one but not much. All I ever eat is the white crab meat in the body and the claw meat. If your eating anything besides that then that is what you are tasting perhaps. I always remove the top shell. I rip off it's mouth and eyes, then the apron on the back, then break it in half. You should be able to pull away shell to get access into the channels of meat from this point. There are videos on UA-cam showing just how to do it. Maybe I will do that one day as well.
