Omg! Yummy! This taste so good! I'm from Louisiana so I do not play when it comes to my food haha but this was My first time cooking red beans and rice and wow everyone absolutely loves it! I love that u added a pepper to it! I did that and people thought it was too spicy😒! But whatever... I love the spice it gives it that extra kick boo! I'm a Raging Cajun so I like it hot !! I do the baking soda also it works great even on homemade tomato soup... looks great
The baking soda does work and also is a thickening agent. Sugar will always balance the tomato acid for finikey stomachs and kids. Cheers

Nice!!! I grew up in Port Allen, LA. I do miss that great food from Louisiana and am lucky that I can find most of the Cajun/Creole seasonings here in Austin. The one thing I cannot find locally is that really nice poboy bread from New Orleans.

I soak my beans overnight and rinse the next day. It removes the gas plus it doesn't take as long to cook. Learned this from my aunt Anna Mae. Sometimes I add a little roux for flavoring.
I all so soak my beans over night and in the morning drain and rinse. It makes it easy to not have to scoop up the bubbles or gas. And yes my mother would put the baking soda in if she did not soak and rinse the beans. It's all good.
I do prefer to presoak my beans.

I’m from England originally, the baking soda absolutely works in breaking beans down. Try covering the beans the night before with boiling water. Add 2 tablespoons of baking soda. Next morning rinse. Then follow Troys recipe....
The gas that you have from beans is from the high fiber content in the beans. Baking soda doesn’t reduce the amount of fiber in the beans. Embrace the fiber. Just make sure you’re drinking 64+ ounces of water (unless you have CHF and are fluid restricted).
@@Khorton014 The gas is caused by a specific sugar... oligosaccharide... which doesn't break down until without a certain type of bacteria. One which isn't present until the very end of the line of the large intestine.

My mother was from Louisiana so you know I was brought up on grits, red beans and rice, and rice and gravy. Nothing better then this food, and I am blessed to have had a mother who was a great cook. I now cook all her dishes, except I haven't made dirty rice yet stuffed in green bell peppers....but I plan too.

I always love cooking my red beans in a cast iron pot over a camp fire...something about cooking over a fire that makes everything better!
Old post, I know, however, anything cooked outside always seems to taste better to me. I cook a huge pot of Brunswick stew each fall, fry my cornbread on my outside griddle to!

Yea T-Roy, you got it going on. Really like your videos. I made something like this tonight, but wished I'd seen your recipe first. I know that went down well with that cornbread, sweet tea and blues. I'm old country boy from eastern Mississippi. I live just-up-out-of-the Delta---home of the Blues. I never met a bean I did't like! I alway keep at least 8 or 9 types around for survival, LOL. One thing I do is use 2 or 3 meaty hocks or smoked neckbones. After the meat began to cook off the bone, I remove them, debone them, chop the meat and add it back, to finish the cooking. I do the same with my baked beans too. This is some good eating.
When I first moved way from home I had very little money, but I had to eat good, filling, nourishing food. With $10.00 I went to the store and bought a bag of red beans, I couple of scoops of rice from the bulk section, two scoops of cornmeal, and some scallions, and one sausage. A neighbor gave me two sticks of celery, a bell pepper, one egg, and a cup of milk. I made this very same dish, and ate like a champ for a straight week!

Thanks for the tip about the baking soda. I don't eat beans very often and a while ago I made a huge pot of beans. They were so delicious but about an hour after I ate them I started having the most painful abdominal cramps that last for over 24 hours. I haven't made homemade bean since even though I would love to. Now I will try your method. I also hear that skimming them, while cooking, takes some of the gasses off.

This is the first T Roy video I ever watched....a few years ago! One of my favorite channels since!
Making this for the first time tomorrow. We've always used a box of Zatarain's with smoked sausage for a cheap and easy week night dinner, for years, but after visiting NOLA the first time this year, I decided I need to do the real thing. Serving it as one of the sides for a get together tomorrow with brisket, scalloped potatoes and corn bread. Weird combination I know, but I have a bean hater so we needed a side she loves. It's going to be a carby, sinful, worth every calorie feast! I just love watching your videos. You seem like such a genuinely nice person and your way of showing us how to cook is just..comforting? You'd make a fantastic teacher of pretty much anything. I needed a math teacher like you back in the day. Maybe I wouldn't hate math so much!

my dear old Mum use to make us a very similar meal made from red beans,onions,peppers,bacon,but included a ham hock,she would boil it all for about 8hr, then let it cool overnight and then serve it up on a bed of rice for tea the next day, my mum was from Belize City, I'm welsh and Love the meal.. thank you for showing me another way of making it,but Im leaving the hot,hot bits out hahah thank you

+dave Jones My mom is from Kentucky and we cooked this as well. We used beef sausage, green onions, bell pepper, celery, and Kidney beans. We all loved this, you could always get as much as you wanted.

I'm gonna try that baking soda thing. I usually soak the beans overnight, and I also boil the beans hard with the top off the pot for 15 minutes with some kelp seaweed ( I live in New England!). The kelp adds nice flavor with no added salt and also adds vital trace minerals. I then turn the fire down and let the beans simmer till tender. I LOVE LOVE LOVE red beans and rice! Thanks for your nice, easy, and straightforward video.

Made this last week. I added some spices and dried herbs. Soooo delicious and comforting, and it makes so much too! We had it with fresh baked cornbread. Delicious and cheap meal. Perfect.

Dude! I did this with chorizo, bacon and andouille (all 1lbs each), used beef broth instead of water, black beans and 2 jalapenos that I stabbed through and I've won every chili competition I've been in since. You're awesome, T-Roy.

Funny, I was craving this for some reason, hadn't eaten it forever. Looked on youtube and immediately found T-Roy.....ha! Should've known you had a video on this recipe. Thanks! I got it started a little bit ago and tried the baking soda. Should make my wife much happier tonight after a pile of beans! Best part of this is that its dirt cheap to pick up the simple ingredients.

My Mom put soda in our beans for the same reason. Actually the Oligosaccharides in the beans are what cause the gas since they are difficult to digest. The bacteria make a lot of gas while eating them . Soda likely does nothing but make you feel better. Thanks for this though Troy I always like your vids.

This looks great can’t wait to try this one! In England a similar thing is done with the baking soda with dried peas. Peas would be prepped the night before. Peas go into a small pan, add boiling water and cover by 1 inch. Add a tablespoon of baking soda. Rinse before cooking. Peas fall apart. Gray vid once again Troy. Thx

First time viewer of your videos. Was impressed by your knowledge of preventing gas. However it is told the true remedy is to count your beans. That's right. you count 239 beans for the recipe, and don't you add one more. Else they be two forty (too farty).

The reason for cutting the sausage into coin size is to expose as much flavor as possible to the beans. Occasionally, I would boil a ham hock for a couple hours, remove the outer fat and part of that I would dice up and add that and the meat to the beans. andouille is the best if you are cooking New Orleans style beans. I also put bay leaf in mine at the beginning of the boil. I just had a bowl of beans for lunch today. Justin Wilson, can't do better. And I like his style of cooking.

Down here in Louisiana we worship the red beans. In the past it was the staple food on monday which was laundry day. The best cooks for this I have found were the old black people in south LA. Bless their hearts. I wish I knew half of what they knew about cooking.
