could you use pickled pigs feet, or is that something different ?
@@jackmehoff2961 No not in the red beans, the pickled flavor will throw everything off. Some folks use pig tails for flavor, you would boil them a little before adding to the beans just like Charlie did. They're just not as salty as the pickled meat . I prefer the pickled meat hands down. Oh... but those pickled pig feet are delicious cooked in a red gravy,
low and slow until tender serve over white fluffy rice. Don't use the juice in the gravy.
@@louisebennett9282 Thank You for the heads up ! I`m in Michigan, we don`t get that fancy food you guys get lol. Rather than soaking my beans, I pefer to cook them in ham juice.. It takes longer to cook, but I believe it infuses flavor in the beans. I`ve learned alot from Charlie about southern cooking..
Thanks Charlie.
Could you add playlists to help find recipes?
Where can I find pickle meat since there’s none in Atlanta
Man I got a lil emotional watching this. Haven't seen red beans this creamy and perfect since my grandma passed away. Incredible job looked just like home Charlie!
I appreciate the compliment. Wow sorry to hear about your grandma..
Facts bro!!! I can remember that fragrant smell when I can home from school. Ain’t nothing like mom’mie red beans!! I’m out here in Houston with no hope. Lol On this video bro about to make it happen!! Thanks chef!!
@@jamesbaldwin4758 LOL I'm from NO to in Houston and I can make just like this except I fry my season in bacon fat before I add it to the beans, and I don't use pickle meat just smoke sausage. U can do it!! LOL
When I grew up that was Monday night dinner. Thanks Charlie
That's cool. You're welcome!
Me too and fish on Friday
@@esh5168yup In that order
Adding "New Orleans" or "Louisiana" before any food just instantly makes it sound good, lol. It also looks good.
You're right about that Cody. Thanks for sharing! :)
I find all of your recipes interesting. Some I make and they are delicious. But ever so often one of your recipes will just blow me away and I know I have to make it right away. Like this one. We eat with our eyes first and my eyes tell me this is going to be incredibly good. I can't wait to take the first bite. Thank you, Charlie!
Hey there! That is good to hear. Let me know how the Red beans turn out. You're welcome and thanks!
OMG Charlie. I just told my husband a few days ago how much I miss pickled meat. I was home 2 weeks ago and almost brought some back with me. To be healthier we've been using smoked turkey when cooking greens and beans for the past 10 years and even though it's delicious *ain't nothing like pickled meat* 😄 They came out so creamy. Man I wish I could have a plate.
That's it. The next time I'm home I'm bringing pickled meat back with me. 🤭❤ Those beans are perfecto. 👌🏾
Wow that is awesome. Yes you are absolutely right about that. Thanks for sharing!
Mr Charlie youve done it again! Taken something I thought I knew how to cook and made it better! What a pride you are to our city! Really missing Nola right now with Mardi Gras starting. Best wishes from Mobile Alabama.
I appreciate the compliments. Thanks my fellow New Orleans native.
Has anyone ever told you that you amd Bob Ross have the same little chuckle? So cute. 💕
Yes there are some comparisons there! Thanks Heather! :)
Beans sure do look good!
I appreciate the compliment. Thanks!
Hey Charlie. I just want to say thank you. Watching your videos has been an inspiration for me. I normally shy away from cooking since I am only really comfortable with basic meals. I watch, listen, and follow along. Sometimes I mess up, but I try again if I'm really in the mood. When I get it right though, I say thank you and thank Charlie. Have a great day.
You're welcome. Happy to hear that my videos are an inspiration to you. It's cool. Messing up is apart of the growing process. From there you learn from it and make yourself better. You have a great day as well.
I swear, everything you cook looks delicious 🤤😋 I miss the taste test and table bang.
Thanks a lot Julie! :)
Charlie feeding an army!
Right. Sometimes I could be the army. lol
I have never soaked beans overnight but still make a delicious, creamy pot of beans in 2 1/2 hours.
Agreed I soak mine in hot water for a about 3 to 4 hours and that makes them soft.
Alyssia That's something..
lady red Yes absolutely!
I don't soak my beans but then again it takes at least 5 hours to cook
@@zatotheck Wow that's something. Soaking reduces the cooking time by half or even more. What kinda beans you cook that take 5 hours to cook? I could see 3 hours but 5 is a longg cooking time for Red beans.
Charlie the reason I ordered bookoo Chef Paul Prudhomme seasonings.
Me too!
It's beaucoup, but I knew what you were trying to say.
Trust me I know but I ain't wanna be too creole lol. I'm from the 7th ward lol
@@alyssiamelange merci beaucoup 😁
@@ladykay7169 Same, went to Valena C. Jones! ❤
Charlie, you're representing New Orleans well as always! Except for the butter, basically just like my mother and grandmother used to make it. They didn't add the butter at the end, but I might have to try it. Well done!
That's cool, Thanks. Let me know how it turns out. Thanks!
You can just taste the flavors through the screen 😋. Charlie you making everyone do the thigh clap 🤣
Yes absolutely MoNo! I know right. lol ha ha ha
No taste test this time?!?! Charlie's switching it up on us,y'all 😀 Beans look so good! 😁
He’s probably making the corn bread he forgot! 😂
@@moniquehorton1111 LOL!
I was thinking he burned it or something.

Thx great video for young cookers

That's another winner charlie! And I'm glad you are showing people that good cooking comes from tasting and seasoning as necessary as you go, regardless of the recipe measurements. And that good flavor is produced by seasoning in layers. And also cooking different uncredients by them selves, instead of throwing everything in together. Cooking ingredients separate gives one control of the end result flavor. I learned a lot from you my friend!
I appreciate the compliments. Yes, you are right about that. Happy to hear that you are learning from my videos. Thanks so much!!
Cannot wait to make this! Ty!

Charles you have a lovely voice I love you're accent. I can listen to you talk for hours.
I appreciate the compliments Patricia. Thanks!
I need a plate of that good New Orleans red beans and pickle meat.
I know right. lol
Outstanding. Your momma would be proud, Dawlin. One thing you forgot is to pour your soaking water off your beans and replace it with fresh water to remove the excess nitrogen, thus reduce flatulence. Also instead of butter I like to fry up some bacon and then sweat my trinity and brown off my sausage in the bacon grease before dumping everything into the beans. BTW, appropriate vid for a Monday! I also like to add some Lee and Perrins Worcestershire sauce and a tablespoon of liquid smoke (if you don't have a smoked ham hock to add.) Also Manda sausage is OK. Double D is better, but Conecuh sausage (the thin one in the crisp, natural casing) is the best. Don't forget to serve with crisp pickled onions or chopped sour pickles.
I agree with you about the tip to reduce excess gas, but this is a original New Orleans recipe. Just a small amount of sugar added at the beginning will solve that gas issue. When using pickle tips, or Manda's (not sold in certain states) you won't NEVER EVER need liquid smoke for the smokiness. D&D or Manda's already have the flavor . We NEVER EVER serve pickles or pickled onions with our Red Beans, crusty French bread or some sweet cornbread is a traditional New Orleans side. If they're not creamy like these, they're not cooked the New Orleans way.
BTW Conecuh IS good if you can't find Manda's or D&D in your area.
If you want a smokey flavor, tasso is the way to go.
Chip Sushidog That's something. I'm really not sure about what you are saying here. Ain't nobody from New Orleans serving no Red beans with no pickled onions or sour pickles...The water method I tried that and it's not all that effective based on my experiences. I didn't have gas from eating these Red beans.
You betta tell'em Louise...Yes!! Now I've heard about the sugar and know of people who add the sugar in the beans. Based on my experiences, the organic bay leaves do a wonderful job with cutting the gas. Not 100% effective, but it works for me.
Mick McGrath Smoked meat with bones is a great idea! Tasso won't help at all.
Great to see ya Charlie! Thanks for the idea.
Having company over on Wednesday and knew I would make some type of beans to go with the ribs hubbers is putting in the smoker. Now I know what beans to make!!!👍🏻👍🏻
Sending Blessings!!
