Some folks use pig tails for flavor, you would boil them a little before adding to the beans just like Charlie did. They're just not as salty as the pickled meat . I prefer the pickled meat hands down. Oh... but those pickled pig feet are delicious cooked in a red gravy, low and slow until tender serve over white fluffy rice. Don't use the juice in the gravy.

That's another winner charlie! And I'm glad you are showing people that good cooking comes from tasting and seasoning as necessary as you go, regardless of the recipe measurements. And that good flavor is produced by seasoning in layers. And also cooking different uncredients by them selves, instead of throwing everything in together. Cooking ingredients separate gives one control of the end result flavor. I learned a lot from you my friend!
OMG Charlie. I just told my husband a few days ago how much I miss pickled meat. I was home 2 weeks ago and almost brought some back with me. To be healthier we've been using smoked turkey when cooking greens and beans for the past 10 years and even though it's delicious *ain't nothing like pickled meat* 😄 They came out so creamy. Man I wish I could have a plate. That's it. The next time I'm home I'm bringing pickled meat back with me. 🤭❤ Those beans are perfecto. 👌🏾

I commented the other day on your fried catfish video and told you I was going to make a dish this weekend. Well, I end up doing the red beans and rice. I have to tell you I did mine with a ham hock, salted pork, I couldn't find pickled pork anywhere around here, and a couple links of smoked sausage. It had a little kick to it because I put some cayenne pepper and some Louisiana hot sauce in as well. I was bringing up one of your videos, that had New Orleans music, and my wife started dancing to the music while holding her soup bowl. She said that was the best red beans and rice I have ever made. Thats good 504 style red beans. I stay in san antonio and the restaurants out here just don’t make it the way we do. I used your recipe minus the pickled pork cuz I couldn’t find any and it came out delicious. Will use the pickled pork next time I’m able to get some.

Outstanding. Your momma would be proud, Dawlin. One thing you forgot is to pour your soaking water off your beans and replace it with fresh water to remove the excess nitrogen, thus reduce flatulence. Also instead of butter I like to fry up some bacon and then sweat my trinity and brown off my sausage in the bacon grease before dumping everything into the beans. BTW, appropriate vid for a Monday! I also like to add some Lee and Perrins Worcestershire sauce and a tablespoon of liquid smoke (if you don't have a smoked ham hock to add.) Also Manda sausage is OK. Double D is better, but Conecuh sausage (the thin one in the crisp, natural casing) is the best. Don't forget to serve with crisp pickled onions or chopped sour pickles.
I agree with you about the tip to reduce excess gas, but this is a original New Orleans recipe. Just a small amount of sugar added at the beginning will solve that gas issue. When using pickle tips, or Manda's (not sold in certain states) you won't NEVER EVER need liquid smoke for the smokiness. D&D or Manda's already have the flavor . We NEVER EVER serve pickles or pickled onions with our Red Beans, crusty French bread or some sweet cornbread is a traditional New Orleans side. If they're not creamy like these, they're not cooked the New Orleans way. BTW Conecuh IS good if you can't find Manda's or D&D in your area.

Ain't nobody from New Orleans serving no Red beans with no pickled onions or sour pickles...The water method I tried that and it's not all that effective based on my experiences. I didn't have gas from eating these Red beans.
You betta tell'em Louise...Yes!! Now I've heard about the sugar and know of people who add the sugar in the beans. Based on my experiences, the organic bay leaves do a wonderful job with cutting the gas. Not 100% effective, but it works for me.

I love Camellia pinto beans. You can't find that brand in any store here. I order them from Amazon and they charge about $ 6.00 a pound for them plus shipping. That's a lot but they sure are good.

I have never soaked beans overnight but still make a delicious, creamy pot of beans in 2 1/2 hours.
Agreed I soak mine in hot water for a about 3 to 4 hours and that makes them soft.

Double D is better, but Conecuh sausage (the thin one in the crisp, natural casing) is the best. Don't forget to serve with crisp pickled onions or chopped sour pickles.
I agree with you about the tip to reduce excess gas, but this is a original New Orleans recipe. Just a small amount of sugar added at the beginning will solve that gas issue. When using pickle tips, or Manda's (not sold in certain states) you won't NEVER EVER need liquid smoke for the smokiness. D&D or Manda's already have the flavor . We NEVER EVER serve pickles or pickled onions with our Red Beans, crusty French bread or some sweet cornbread is a traditional New Orleans side. If they're not creamy like these, they're not cooked the New Orleans way.
BTW Conecuh IS good if you can't find Manda's or D&D in your area.
If you want a smokey flavor, tasso is the way to go.

Ain't nobody from New Orleans serving no Red beans with no pickled onions or sour pickles...The water method I tried that and it's not all that effective based on my experiences. I didn't have gas from eating these Red beans.
You betta tell'em Louise...Yes!! Now I've heard about the sugar and know of people who add the sugar in the beans. Based on my experiences, the organic bay leaves do a wonderful job with cutting the gas. Not 100% effective, but it works for me.

I love Camellia pinto beans. You can't find that brand in any store here. I order them from Amazon and they charge about $ 6.00 a pound for them plus shipping. That's a lot but they sure are good.
