Great recipe! I make a lentil/potato-based soup multiple times a week. I'll have to try this variation!
I make this at least once a week, it's very cheap, easy to make but packed full of protein. Very nutritious

Smoked tofu as croutons on the soup
is a nice idea
I generally use it in sandwiches
to replace smoked cheese
so another use is good.
I made this today and it is simply delicious. It came out like a chunky stew with the carrots and potatoes and I left it as such and just enjoyed a couple bowls with a drizzle of Tamari over top. Like you, even when I do purée I will live some bits of chunkiness. I may not purée this after all! I may enjoy it tomorrow or next in a wrap with some Walnut cream sauce drizzled inside. So yummy. Thank you 🌟
