Ingredients
5-6 mushrooms
1 onion
2 cups of cooked brown lentils
1 block of smoked tofu (optional)
1 clove of garlic
1 tbsp white miso
1/2 tbsp white wine vinegar
Salt
Pepper
Instructions
1. If you use dry lentils: soak the lentils (1 cup) for several hours, then simmer them for around 30 minutes until ready. Rinse well.
2. Pre-heat the oven to 180°C (350 °F).
3. Cut the mushrooms in quarters, halve the onions. Roast them in the oven in a baking pan for 35 to 45 minutes. Take them out.
4. Add the lentils, tofu, mushrooms, onions, garlic, miso, vinegar to a blender, blend well. The smoked tofu will add more protein and a rich, smoky flavor.
5. Seasons with salt and pepper.
6. Use as a savory dip or bread spread.
