    Hey Dylan,
    First of all thank you so much for these great series of videos. I have a question about the difference in the smoothness of the chocolate from the stone grinder and a ball mill.
    Is it too vast ? Or even after grinding the cocoa and sugar for a day or two it feels gritty ? Please reply !

      you clean your mellenger after ending a session of chocolate making , if you are willing to do another session quickly right after a batch , you don't have to clean it ^^

    How long do you let the stones dry for?

      It depends on the climate you're in, but they can dry really quickly. Anywhere from 10 minutes to an hour, but you'll be able to tell just by looking at them.

      You should never use soap, just very hot water. Soap will deteriorate the stones.
