I have been following and watching your videos it keeps me inspired and it keeps fueling my dreams of owning my chocolate factory some time in future... honestly, seeing the machines, how they work and everything,they must be really expensive... I'm trying to figure out the cost of the entire place... looks like a fortune
My family and I did a tour of this factory in which one of their staff/sommeliers walked us through the chocolate making process and we did a tasting too. The amount of love and passion these guys put into chocolate making is incredible and it shows in each single bar.

What is the drip rate for your process? As in, how many seconds on average between produced bars?
