  • Tasty Vegetable Pulao
    Ingredients
    3 cups basmati rice (soak for 20 minutes)
    6 cups water (make it hot)
    3/4 tbsp Ghee
    1 Onion (sliced or fine)
    2 Bay leaves (Tej patta)
    6 Green cardamom,
    8 cloves
    1tbsp peppercorns,
    2 inches cinnamon
    Salt - as per your taste
    Vegetable (cut in small cubes)
    1 big Potato
    1 big Carrot
    10 beans (cut into half inch pieces)
    ½ cup green peas
    Place cooker on gas stove, add ghee once it is hot enough
    Add cut Onion and once translucent -
    Add the Bay leaves, Green Cardamom, Cloves, Peppercorns, Cinnamon.
    Add all the cut vegetables
    Add salt and fry for about 3 minutes.
    Add hot water once it starts boiling and add the rice.
    Check the taste if salt is required.
    And close the cooker.
    After the 1st whistle slow down the flame and keep for 2 ½ minutes
    Do not open the cooker for atleast 5 minutes.
    Serve steaming hot with cool Raita and Pickle.

    Pomegranate Raita
    Ingredients
    2 cups Curds
    1 Onion
    ½ small Cucumber
    1 Tomato
    2/3 Green Chillies
    Hand full Coriander leaves
    ¼ cup Pomegranate seeds (arils)
    ¼ tsp Black salt
    Salt as per your taste
    Beat curds in a bowl.
    Cut Onion, Cucumber, Tomato, Green chilles and Coriander leaves.
    Mix the above cut ingredients in the curds.
    Add Black Salt and Salt
    Decorates with pomegranates seeds (arils) to the mixtures.
    Sprinkle some coriander.
    **Keep in the refrigerator for half an hour to get best taste.
