  • Blackening is a time-honored technique, perfected by Paul Prudhomme, who used it extensively at his restaurant in New Orleans K Paul. It involves coating the protein of your choice ( Tuna steak in my example) and searing it on a hot cast iron griddle or pan. I use Blackened Redfish Magic, but almost any cajun seasoning will work. My pan was hot, 500+ degrees but not STUPID hot. Turned out good anyway.

    Sal Tuna steak looked Rockin. My wife is an a big fan of blackened tuna, or blackened fish either. I absolutely love it. Thanks for sharing

    I love tuna and there is nothing better than Blackened Tuna Steak. Great video recipe and presentation. That Mosaic IPA beer looked good too !

    Paul's seasoning is the best for blackening -- seafood, pork and steak. We happened to meet Paul many years ago. Hot cast iron outside. Paul signed our recipe book in Richmond, VA. I think it was. The tuna cuts look much like sword fish cuts. Cheers.

      @@rootboycooks King mackerel is a good eat, broiled in the oven, skin down on a hot broiler pan. Butter, lemon and dill. Make it for me:)

    Funny that every blackened tuna video I have watched all said the same thing. “Most people like it rare, but I like it done” Guessing most people feel that way, they just don’t know any better.

    I love some blackened fish. You don't see it much anymore. I think, if you are to going to blackened something, Chef Paul Prudhomme's seasoning would be the most effective choice. Nobody knows blackened better him. Good job on that properly cooked tuna. As I have mentioned before, I'm not a beer drinker, but that was a good looking beer. Yeaaa Papa Texas and Madi. Once again, Nicely Done. Thanks for sharing. 😎.

    The tuna looked nice and fresh Sal... it tuned out nice in the pan with the Paul Prudhomme blackened seasoning. Yeah,
    you want that pan stupid hot... need to see a heavy smoke when the tuna hits the pan! Glad you liked the Mosaic IPA!

    OH! The Famous Kerbey Lane Cafe in Austin, Texas, served the best tuna steaks for years, and then suddenly stopped one day in 2001 or so. Saddest day ever!
    Whoa, those are pretty tuna steaks too. My fav way is just blow-torched barely, and wrapped in Chinese 7-pepper spice, served on some seaweed salad..mmmm. Oh you're flipping it right in front of me... here we go....yeah, I want it rare, raw, or blackened! I'd put this tuna steak on a pile of bacon rice pilaf, and get some grilled veggies in there too. Wait.. naah. MORE tuna!
    Ooooh, just make a tuna salad sandwich out of that blackened steak...that'd be amazing too!
