No fuss and absolutely delicious. I have tried other recipes but result was crumbly and dry. This recipe for Chocolate Bread is fragrant and moist. Zucchini is the key, thank you for the recipe.
I just baked this and it tastes amazingly chocolatey without any noticable zucchini flavour!! - I did not follow her recipe exactly because I used oat flour instead of all-purpose flour and about 2 tablespoons less sugar than what is called for in the recipe. I made sure to whip the eggs and sugar for 2 minutes like she shows in the video (I timed myself to be sure!). I made a half recipe so I only baked for 35mins in a preheated oven. Also added less chocolate chips because it's already a rather sweet treat. Next time, I might try maple syrup or coconut sugar instead of white granulated sugar and I'll probably mix chopped pecans or walnuts into the batter.

I had some extra Zucchini that I had to use up and with one of them, I made this recipe. I honestly never did a Chocolate version before and after my Grandmother passed in 2016, Laura is my go-to for some of the recipes that were so close to my Grandmothers :( and I am thankful for that. Anyway, the only thing I did different was, 1. I had no chocolate chips BUT what I did have was a bag of Expresso flavored chocolate chips so I just omitted the expresso powder (since that flavor will be in the chips) and instead of 2 tsp of vanilla extract, I used 1 w/vanilla and 1 tsp with chocolate extract from frontier co-op spices that my Cousin bought me. I am super excited to try it! it's baking now, I should wait until it's done and I can taste and review but anything from Laura is delicious! I have faith this will be too!

If it's crumbly, it's probably because it's a little over baked. Try cutting on baking time by a couple minutes. Hope it helped! Lemme know if it turns out any better xx 😊

Laura let it sweat for half an hour and it will be ok! I always let my cake sweat when I will cut it right away.
