    I made chawanmushi the other day and it is incredibly savory and comforting. I just love the smooth, soft custard texture. I also didn't add the soy sauce to the egg mixture because it will turn it to a brown, sort of a muddy color which tastes good, but is not very appetizing. The soy sauce and sesame oil and scallions can be added on the top of chawanmushi before eating.

    I run out of eggs because all the people were crazily swept away all the eggs, potatoes, toilet papers , flour and cans food from the grocery stores :((( scared of the locked down in our town :(( ( which not even have a single Covid-19 case yet !       We don’t use chickens stock, we use dashi stock and shrimp shells would make great dashi flavor

      I've seen them in a couple of Japan Home stores. Do check the material as the stores carry similar designs in both ceramic and plastic materials. Be sure to pick the ceramic pots with covers.

      Yes, this one is ring. We only use MIRIN and DASHI is the Japanese way

    Hi Chef, I tried the method, following exactly, used 4 small eggs instead .. used small fire to steam for 20mins, and used aluminum foil to cover to prevent the craters forming. However, it still turn out to be full of craters .. any idea what went wrong?

    No no no... please don’t use chicken stock... we don’t use it we use dashi and that’s the only way to make real chawanmushi

    Hi Ronald... today I tried making the chawanmoshi but failed...using the same recipe as you taught..my steamed egg got holes and not smooth even after sieving the egg mixture...steamed for 20 mins. Please advise.. thank you

      Hihi. Try to remove as much bubbles from your eggs before steaming. Also tilt the cover so that the water droplets don’t fall on the eggs during steaming. It is a common problem actually. We cooked a batch and 2 came out ok but 1 had hole in them.
