you are a GENIUS! I just made these, and my whole omnivore family loved them!! I was pleasantly surprised by the chewy texture, very reminiscent of my favorite cookies I used to have when I wasn't vegan. and yes please for a crispy cookie recipe:)

You could add in like 1/4 cup oil and decrease the dates to around 10 instead of 14. I still can't guarantee they will be crispy though, date paste tends to make things chewy regardless. I do have a crispy oatmeal cookie recipe if you like, or you may be better off with a non-date sweetened cookie recipe.
I'm not either, so I use baking soda instead... which is activated only with an acid, so you might add a bit of lemon juice (and a bit less milk - so that the consistency is not too thin); oo, and you usually need only about half the amount of the baking powder
+LWCLAPBAM Yep you can, just soak your dates in the non-dairy milk for about 30 mins to 1 hour first. Then add everything to the food processor except the chocolate chips, blend, then stir in the chocolate chips :)
I don't recommend that in this recipe, they aren't as sweet so the cookies will be kind of bland, but maybe try these cookies instead for a banana sweetened cookie: www.feastingonfruit.com/turmeric-latte-breakfast-cookies/ I've made them with chocolate chips many times, and you can skip the molasses if you prefer :)
Hmm I've never worked with date powder so I can't really say. But a cookie recipe this size usually has about 3/4 cup granulated sweetener, so I'd try that :)
guys i even cooked these in a microwave and they still turned out very very good for a healthy guilt-free cookie!:D

You could certainly try it, although date-sweetened recipes in general are rarely crispy because there is no sugar crystallization🍪🍪
