Fudgy Flourless Chocolate Cookies

- These flourless chocolate cookies are so soft and chewy, no one will miss the flour! My recipe is easy to make and has an indulgent chocolate flavor you will love.

Ingredients
6 oz 60% cacao chocolate bars, chopped (170g)
½ cup unsalted butter, cut into pieces (113g)
2 large eggs, room temperature preferred
½ cup granulated sugar (100g)
¼ cup light brown sugar, firmly packed (50g)
1 teaspoon vanilla extract
¼ teaspoon salt
¼ cup natural cocoa powder (25g)
3 Tablespoons cornstarch
¼ teaspoon baking powder
½ cup mini chocolate chips (85g)

Instructions
00:00 Introduction
00:20 Preheat oven to 350F (175C) and line a baking sheet with parchment paper. Set aside.
00:24 Combine chopped chocolate and butter pieces in a medium-sized microwave safe bowl. Heat in the microwave in 25-second increments, stirring in between, until chocolate and butter are completely melted and smooth. Set aside.
01:34 In a separate bowl, combine eggs, sugars, vanilla extract and salt. Use an electric mixer to stir together, gradually increasing mixer speed to high and beating until thickened, increased in volume and batter is lightened in color and opaque (about 2 minutes on high speed).
02:31 Gently (using a spatula) fold chocolate mixture into the egg mixture until combined.
03:03 Sift cocoa powder, cornstarch, baking powder over the chocolate/egg mixture. Use a spatula to gently stir ingredients together until about 50% combined.
04:09 Once approximately 50% combined, add mini chocolate chips and continue to gently stir until ingredients are completely combined.
04:35 Scoop dough by level 1 ½ Tablespoons onto prepared baking sheet, spacing cookies at least 2” apart. Note that the raw cookie dough will thicken as it sits, this is fine.
05:27 Bake for 9-10 minutes. Allow cookies to cool completely on baking sheet before removing and enjoying.

I made these cookies earlier this evening & they're absolutely delicious! They're fudgy, soft in the middle with crisp edges. Probably the best cookie I've had & they're very simple to make.They're like a brownie in a cookie.
I'm was considering adding a tsp or so of expresso powder to enhance the chocolate flavor but these coikies don't need anything except a glass of milk or cup of coffee to drink with them.
This iwill be a permanent recipe in my house.😊

@@cindyhickman5075 I got 21 cookies from the batch. I used the scoop like she did but maybe my scoops were a little more generous because her recipe said it yields 24 cookies. They were absolutely delicious!😊
Delicious except they are so soft they fall apart just trying to get them off the cookie sheet. I baked a couple minutes extra to try and crisp them up but they were still soft. Taste is terrific.
@@kathybentley1043 I had to allow mine to cool completely on the parchment because they are quite soft when warm. Since they're not very thick, they were still a bit delicate even afterwards but we really loved these cookies.

I made these today and I needed to tell you how fantastic they are! I used 70% chocolate bars because that's what I had on hand. I also used both white and brown Splenda blend. I gotta say...I have a brownie cookie recipe that I might as well throw away because this recipe is far superior! Thank you, once again, for a great recipe! Love your stuff!

Making these next week along with your cheesecake bars! I have to make them the day before and transport them a few hours to family. What is the best way to store them so they maintain a crisp edge and fudgy middle? Sometimes when I store baked goods like that the entire thing turns soft. Thanks!
I store in an airtight container at room temperature. I have not had any issues with the texture changing personally.
Just give me a tall glass of chilled milk!

They shouldn't crumble and fall apart. I would guess they are either over-baked or under-baked. If they were dry and crumbly I would say over-baked. If they are just falling apart possibly under-baked. I'm sorry this happened and I wish I could be more helpful. :(

I find that Stevia ruins my bakes. I use both white and brown Splenda blend and get perfect results every time. Flatten cookies some before baking as they won't spread the same. Hope that helps!
What if the batter holds up during the scooping part --- but after baking they are very flat.

I love the recipe, I've made Flour less baked goods , and make an " almost Flour- less chocolate cake ( its one nice layer, topped with chocolate Ganache`. ) .. so I will definitely try these.
A suggestion : ( not criticism) ....
I would definitely include the part that you mentioned at the end - about the eggs - where you're actually beating the eggs enough so that people understand if you don't do that long enough , then you're not going to be able to salvage the product. I thought that it might be better to include things like that " at the time it's being shown ", rather than towards the end of the process.

No one expects perfection, I only suggested it because, If someone makes this and then it doesn't turn out right but then they watch at the end where you include the part about the eggs... that's all I'm saying and it was definitely NOT criticism. How do I know when they’re done if I use a convection oven?
I would make sure they look comparable to the ones I show coming out of the oven. :)
If they are dry add 1 tablespoon mayonnaise,it works for cake mixes too😀

I have honestly never tried them in an air fryer. I think it could be done, but I can't really say how it could be done.

It amazes me how much people go through to use a microwave. So much simpler and less toxic to boil a pot of water and then set the bowl in it for a slow melt. Double boiler if you have one.
I use the microwave because it’s easier and quicker for me, but you can certainly use a double boiler, there’s nothing wrong with that.

But just a suggestion: At the end of your videos when you’re tasting your treats, I wonder if you could zoom in to show the texture/consistency and/or say a few words about how they’re supposed to come out.
For some reason I am awful at knowing if cookies come out right or not. I always think they’re wrong. Then hours later my boyfriend tries them and just knows immediately.
I don’t know what’s wrong with me 😂. But this extra little bit of info could be really helpful to me! lol

Yes they will be good for several days in an air tight container. :)
A good rule when trying a new recipe is to watch the process in entirety, then watch again before you actually make the recipe to remind you of tips and hints. Speaking from experience. 🎉

oops my #1 question did not post: 1) to make this Keto friendly, I use Monk
fruit sugar but it does not allow the eggs to double in size and become creamy (what to do?); 2) I’m not supposed to use cornstarch; is Tapioca starch an option or something else?

You'll need to add some kind of oil - look it up in a substitution chart. There might also be some amount of sweetener that you'd need to add.

It is not, you could still probably use it just fine in this recipe, but the cookies will be darker in flavor
