Ro I would super appreciate if you made a video where you tweak the recipes for sugar substitutes like the monkfruit and figure out the amounts and bake times that work best to make a good cookie. I've been trying to make good sugar free cookies for my diabetic husband forever and they're never quite how I want them. And maybe they never will be because it's just not possible, but I'd love to see what you could do!
I´m sure you know this, but if you don´t : if you are going to use Stevia as your sweetener and it´s the processes white powder only use 1 tesp per cup or else it´s going to taste horrible as stevia is about 250-300 times sweeter than sugar.

I had a feeling that the honey would spread out like that. I think if the ratios were a bit different, honey could work though. I certainly learned a lot about 1:1 substitutions here! Thanks for the insight, great comparisons and saving me time AND money on testing out sugar alternatives. I'll have to give coconut sugar a shot sometime soon! 😊. When baking with sugar replacements I've found if you use a little bit of several kinds of sugars they taste better because no one sugar replacement after taste is strong enough to over power the cookie taste.
Interesting experiment & results. However, when you use sugar substitutes (maybe the honey as well), it's not a 1-1 ratio, as they're typically sweeter than sugar, so you use quite a bit less (I understand 1-1 is what you did here, but js maybe that's why they failed). Another reason for failure is the way you incorporate the sugars are different as well, depending on what you use. As for the powdered sugar, you'd probably want to use more, since it's so fine. This does go to show that you need to adjust the recipe (both amounts & techniques) when you are making substitutions.

Hi Rosanna. Thank you for this interesting video. I’m a type 1 diabetic and do regularly baking and occasionally keto baking. The trick to using monk fruit is to follow a keto recipe as if you have to much it can be very grainy and taste awful. It’s a fantastic product because I can still enjoy a treat without my sugars going high. You can also get sugar free chocolate basically there a lot of products that don’t have sugar. I would love to see some gluten free recipes as I’m also a coeliac that would be awesome. ❤❤❤❤
My favorite kind of sugar is the unrefined brown sugar! It has a lot more molasses so theres alot more moisture and chewiness to the inside of the cookie, but the outside stays crispy and almost caramelized!

Just a note, the amount of Stevia used should have been 1/3 to 1/4, the amount of honey 1/2 to 1/3, and the Date sugar should have been halved to achieve the right consistency of texture and taste. You cannot use the same amounts as you would for standard sugar; you have to reduce the amount in order to achieve a similar result that looks and taste good. Over all, good attempt on those three. The rest would require minor tweaking.
the thing with Monkfruit sweetener is that most labelled that way are 99% Erythritol and 1% Monkfruit. Really they have some nerve calling it Monkfruit sweetener. But I suppose Erythritol with a tiny dash of Monkfruit, might be a little to wordy for a label.
Just a heads up: Recent studies have shown that Erythritol can increase your chances of stroke and heart attack, and Monkfruit sweetener is also almost always blended with Erythritol when it's sold, so be mindful.

Question for a newer baker: I love making oatmeal cookie which require both brown and regular sugar. I’ve had multiple people asking for cookies, one of who is diabetic. What would be the best alternative in terms of sugar for diabetics that wouldn’t ruin the integrity of the cookie?
the best sugar substitute I found that doesn't have an after taste is Allulose.., second would be Sucralose for taste, but the catch with sucralose is that some diabetics can still get a glocose rise even if it is minimal compared to real sugar. forget about Erythritol, Stevia and Monk fruit, they all have an after taste.
My husband is not supposed to have sugar so we use monk fruit sweetener all the time and even though it does taste different and can upset the tummy, it’s a great alternative to regular sugar. They also have sugar free chocolate chips that you almost can’t tell are sugar free.
Moulded maple sugar candies are the best thing on the planet lol theyre often in maple leaf shape and they just melt in your mouth mmmmm you can also buy a solid block of maple sugar that you would grate down with like a cheese grater

Type 1 diabetic here! There are sugar-free chocolates made with sugar alcohols. But most diabetics can eat sugar! Type 1s just have to know how much sugar they're eating to dose the right amount of insulin for it and type 2s generally eat it in moderation.
Love these types of videos! I would have loved to see a 100% brown sugar and 100% granulated sugar control cookie as well. It seems a little unfair to replace 1:1 when there are 2 types of sugar in chocolate chip cookies!

I love this video so much that I think u should test every type of eggs,butter or milk for cookies like for example if u do testing every type of milk then it would be Whole milk.reduced-fat milk,Low-fat milk. Organic milk. ... Skimmed milk. ... Raw milk. ... Lactose-free milk. ... Flavored milk. 10 :14 I don't know its glycemic index, but carob chips are one possible substitute for chocolate. I was in third grade with someone who had a chocolate allergy, which is how I found out about carob.
From the looks of things, carob chips are higher on the glycemic index than chocolate chips. There are sugar free chocolates that are fine enough that could probably make decent chocolate chip replacements, though.

there's dextrose, fructose, grape sugar, splenda, mannitol, xylitol (golden sugar), sorbitol, maltitol, demerara sugar, inulin, chicory, agave, rice syrup, allulose, molasses, yacon syrup, and more. I've tried all except for allulose. Coconut sugar is still my favorite :)

I love this video so much that I think u should test every type of eggs,butter or milk for cookies like for example if u do testing every type of milk then it would be Whole milk.reduced-fat milk,Low-fat milk.
Organic milk. ...
Skimmed milk. ...
Raw milk. ...
Lactose-free milk. ...
Flavored milk. Or if it is eggs then it would organic or vegetarian but for butter there are so many types of butters that I don’t think I can even remember their names but if you see this comment then yeah but anyways loved the video with Sam and bye.

10 :14 I don't know its glycemic index, but carob chips are one possible substitute for chocolate. I was in third grade with someone who had a chocolate allergy, which is how I found out about carob.
From the looks of things, carob chips are higher on the glycemic index than chocolate chips. There are sugar free chocolates that are fine enough that could probably make decent chocolate chip replacements, though.

They do make sugar-free chocolate chips. I know someone who is allergic to cane sugar, and the brand Lillys makes sugar-free chocolate treets.
